Where can I buy really nice cherry cake filling?

I'm making a chocolate and cherry cake next week and so far I've tried tinned cherry pie filling which didn't really taste of much and cherry jam, which was nice but not what I'm looking for.

I sort of want good chunks of cherry in a nice flavoured sauce. I'm a fairly good baker but I've never made my own sauces/jams etc and I can't really waste money on making my own and ruining it!

Does anyone know of a nice cherry filling you can buy!

If you can cook just use frozen cherries and cook them for a few minutes. A sort of syrup/ liquid will be there then. Any ready made cherry filling is horribly sweet.

I would really just use 300g frozen cherries and 75g granulated sugar, let the cherries defrost, boil them up and simmer for 20 minutes and cool them. I made this Black Forest Gateau and it was amazing, cherry sauce rmethod step 5:

Yes, it came out rich sharp sticky and sweet. I was really impressed. I'm sure there's harder ways of doing it but why go difficult if easy works! 😀

If you really don't want to DIY it I suspect Bonne Maman cherry compote would work if you can find it, but tbh i would do as suggested above with frozen cherries and sugar

Never tried it myself (helpful) but Bonne Maman do a cherry compote that might work? Rhubarb version is lovely.

My uncle taught me this method from when he used to work in Little chef in the 80s for their pancake fillings.

Warm through the frozen cherries with a little water and sugar then add cornflour (made into a paste) to thicken up sauce.

As a pp has said, compote may be your solution
Otherwise maybe the cherries you can buy in jars? Although they are likely to be steeped in brandy or similar. Drain those off and I reckon they would work.

If you’ve no problem with alcohol then some kirsch in the cherry compote would take it up a level.

(You could also buy a jar of morello cherries in kirsch syrup and thicken it a bit with cornflour.)

I remember my mum used to use Cherry pie filing that came in tins but I don;t see them now.

Also decades ago I discovered Balkan jam. Absolutely choc ful of cherries. Sadly the only jam I see nowadays is the shit they put in donuts, the runny, insipid shite.

Bonne maman cherry compote is delicious. Think it must be morello cherries so they have a big of a tang but in a sweet sauce.
