Bag of stir fry veg, some cooked prawns / chicken / tofu and microwave rice or noodles which only take a few minutes to boil

Definitely stir-fry, mix peanut butter, sweet chilli sauce, soy sauce and water together for the sauce. Chuck in some cooked noodles. Really quick and tasty.

Crudités with hummus.

Avocado on toast.

Lots of oranges, apples and berries.

Hope you're feeling better now

I bought a bag of frozen casserole veg mix a few weeks ago (carrots, leek, swede and potato I think it was). Simply boiled it with a veg stock cube and blended and it made a surprisingly lovely soup!

The thread title says snacks, but your post says meals so not entirely sure which you want, but any way!
The best best way to pack in the veg is to make the main part of the meal veg, instead of adding veg as a side. Things like veggie chilli, I add red and green peppers, onions, tomatoes and beans so you can easily get 2 if not 3 servings of veg (depending on portion size). Serve with guacamole and salsa or a Mexican corn salad on the side and you get even more.
Similar with curries, sweet potato, cauliflower, red pepper and chickpea works well. Opt for tomato based curries over creamy ones.
Look at replacing mashed potatoes on things like cottage pie, or fishcakes with mashed sweet potato, parsnips or carrots.

When serving veg as sides jazz them up. Add balsamic vinegar, lemon juice, garlic etc for flavour without loads of extra calories.
If eating crudites serve with veg based dips like salsa, guacamole, hummus, roasted red pepper and butter bean.
