What do you eat when kids are away?

Dc off to Exdh tonight I’ve had an early dinner of a bowl of muesli, 2 carrots, some cheddar and a couple of crackers. I just can not be bothered cooking for myself. At the weekend I had avocado on toast, blt made with precooked bacon and a bit of wine, cheese and grapes for tea.

I don’t think it’s terribly healthy, what are nice, healthy meals for one. I do have things like chilli/ bolognaise in the freezer but can’t be bothered doing rice/ pasta for one as I seem incapable of not cooking vast amounts.

Get tortilla chips and just dip them in your premade chilli /bolognaise. A ready meal used to be my go to . You really aren't eating much I know you cba to cook but eat more .

I can't stand cooking. I honestly think that when the kids leave home and DH is on nights, I'll live off cereal and toast. And get my evenings back.

On the very rare occasion I am without children or DH I will go to our nice local Italian with a book and order a Vesper martini followed by a large sauvignon and carbonara.

When the kids are with the exh, usually the things which they don’t like. Quite often Polish specialties- buckwheat groats, dumplings, Polish soups.
If not, then something vegetarian as I don’t like cooking meat just for myself.
Mostly it will be halloumi/ eggs + some kind of potato and salad or vegetables.
Occasionally a veggie burger or veggie ready meal. My favourite is Linda McCartney’s hoisin “duck”.
Nothing which requires more than 10 mins. preparation time:)
