Am I going to be seriously ill now?

Made burgers for dinner tonight using beef mince. After I had taken the first bite I noticed the mince meat was slightly pink (it was mostly cooked but looked like it could have done with a few more minutes on the pan). Will this give me food poisoning?

No. Beef can be eaten raw (Steak tartar) and beef joints are often pink and bloody after cooking

The answer is yes it could make you ill if you are unlucky. Rare steaks and joints are different as the outside is seared and the inside is 'sterile' as it has never been on the outside iyswim. Mince has potential to be contaminated during the mincing/processing and that it why it should not be served pink.
Dishes such as steak tartare have additional critical control points such as searing the outside of a larger piece of meat and then using the middle and mincing just before service, the addition of acidic lemon juice etc.

You are almost certainly fine,OP.

However mince should be cooked through.

Steak and joints are fine as the contaminated area has been cooked.

Minced beef needs to be thoroughly cooked.

You probably know by now whether or not you have food poisoning as it usually comes on pretty fast. 😬

But yeah keep a close eye on burgers in future. I once ate a burger that was slightly pink in the middle (the menu boasted that this was deliberate and they were proud of their rare burgers and had some special technique to make them safe). I was then violently ill every 15 minutes for about 12 hours. It was not a good day.
