DH is a one for using up leftovers in the fridge, and he will be home from work at 7.30. This is what I found in the fridge, and what I've done with it. (I've already eaten, I'm not daft😂)

One cooked jacket potato - I cut it in half, scraped out the potato, mixed with some grated double gloucester, piled it back into the two halves and put them in a dish. Then I found several mushrooms, half a red pepper, half an onion and two rashers of bacon. I've fried it all so it is part-cooked, mixed in a little bit of red pesto, and put it all around the jacket potato halves. Then I found some leftover roast parsnips so I cut them into bits and threw them in as well. I'm then going to bake it at 160 for about 15 minutes.

It was his idea to use up the leftovers, but I'm not sure what he's going to make of it - what do you reckon?

It sounds horrible to me, but if he and you like it, then it doesn’t really matter! I’m sure I eat lots of weird thing others would hate!!

sounds ok apart form the parsnips, I love parsnips but the flavour sounds a bit much with this combo.

Sounds delicious after a hard day at work. Stick the celery and lettuce in cold water to pep them up, add a glass of chilled wine......perfect!!

My mum makes stuffed baked potatoes. Bake the potatoes. Take out filling and fry bacon and mushrooms and peppers mix with potato. Put all back in the skin, put cheese on top and put under grill to brown. I'd leave out the parsnips. Or make parsnip crisps to go with it.

That’s exactly the kind of meal DP serves up as he hates throwing food out! It usually turns out ok to be fair.

Sounds great apart from the parsnips. I like parsnips but I'm not sure they go in this meal.

I might have to start eyeing up the contents of the freezer as it will soon be time for clearing some space so I can get the Christmas stuff in. There's a right load of random clutter and bits & bobs, so he's in for some interesting meals over the next couple of weeks.

As a lover of roast parsnips I'd have been happy with that too :)

I'm trying to work through our freezer too. Fish soup coming up for sure as I've got at least two salmon heads and frames waiting to be used. I'll probably try to make a smaller pot of stock with them than I often do!

DH is away a few nights next week and I have promised myself a few nights of freezer surprise. This sounds exactly the same premise, OP!
