If you live alone or cook for one, what do you eat in a week ?

Long story but my children will literally only eat 2 to 3 meals so I have to cook them on rotation which is fine they meet all their food groups are nutritionally it’s all good I’m just bored shitless.

tonight I’m having a jacket potato with cheese and Branston pickle that’s how inspired things are at the moment.

I absolutely do not want to eat ready meals so I’m happy to bunch cook and freeze things.
However. I dont eat chicken or fish and I wouldn’t eat a steak or joint of beef/pork/ lamb.
The dog has more variety than me.

A lot of soup, toasties with soup, egg on toast.

When I'm in a cooking mode I'll do a lasagna or pulled pork or chilli and eat it for days.
The chilli or pulled pork can at least be made into multiple types of dishes.

Cut an eggplant in half lengthways then score both halves. Steam in the microwave for 4-5 minutes then pour a bit of garlic oil over the top, then spread with miso paste and sprinkle with white and black sesame seeds. Put it in the air fryer for 10-15 mins in 180. Crunchy on the outside and nice soft gooshy eggplant in the middle. When it comes out put some red chilli flakes on top and some shaved Parmesan (trust me) and dig in.

My DM is on her own. She regularly eats things like omelettes and jacket potatoes. However, she does batch cook roast potatoes and sauce (ideal for pasta) and freezes in small portions. She just gets them out whenever. She'll add cheese to her tomato/vegetable sauce she makes for pasta. Also, she'll make a stew/casserole type thing and eat two days in a row.

Stir fry is easy for one. Something like a veggie/chickpea curry can be made and served with naan one day and jacket potato another (no need for rice).

I mostly cook for myself...

Salmon, rice with roasted veg
Fishcakes with broccoli
Baked potato cheese, coleslaw and salad
Roasted veg on ciabatta
Tuna baguette with side salad
Veggie sausage, mash, veg & gravy
Fish fingers, mushy peas, chips
Pasta with Sacla olive & tomato paste, parmasan, salad
Lamb chops, roasties, veg, gravy, mint sauce
Frozen pizza 🍕
Beans on marmite toast with grated cheese
Smoked haddock, poached egg, asparagus

Veggie here and tend to lose my appetite when cooking. I usually want something quick and easy.

Tomato soup and cheese sandwich
Jacket potato, cheese and coleslaw
Little potatoes, bag steamed frozen veg and something quorn
Home made macaroni cheese (make enough for 3 days) and have with garlic bread
crumpets with cheese

I only eat once a day think it was due to be always hungry as a child and having 1 meal if lucky at teatime. No snacks/biscuits/fruit back then either.

Only when I typed that have I realised that its only the one meal I eat with nothing in between! I think I must have learned to live with hunger being the norm.
