What lunches are you eating this week?

To accompany the 'dinners' thread...!
I always find lunches trickier as they can be a bit 'groundhog day'.
What are YOU eating, as I appreciate that lunch (particularly during the week) might be different for each member of your household.

Me:

  • M - tuna nicoise salad
  • T - tuna nicoise salad
  • W - tuna nicoise salad (I eat it x3 as a bag of green beans and large salad bag is the right size for 3 portions! I cook 3 eggs and all of the beans in one go)
  • T - egg mayo sandwich on brown bread (to take to the office on the one day a week that I go in)
  • F - fried egg and brown sauce sandwich on brown bread (yes I apparently eat egg every day!! 🤔)
  • S - fish finger sandwiches with oven fries on the side (made by DH - he makes the sandwiches more interesting by adding Chipotle mayo, cheese, onion and shredded lettuce)
  • S - who knows, it's all to play for!

Now I am retired, I tend to eat two meals a day, brunch and dinner.
Brunches are usually either outright left overs, or derived from previous meals.

So far this week I have had cold gammon and salad wraps, home made pea and ham soup, leftover macaroni cheese with added garlic mushrooms and roast peppers, and eggs on toast.

Will finish the apple cake on Thursday and Friday
Not very healthy compared to others on here. My dinners are well balanced with plenty of vegetables to make up for the lunches!

Peanut butter and tomato is delicious! The tomato adds a nice freshness and counteracts the clogginess of the peanut butter. I have it on malted bloomer bread and it's honestly lovely.

I had no idea that people plan lunch in advance. I just open the fridge at lunchtime and see what's in there

Or worse...... Eat two snickers bars in a row 😋 in my defence they are now sooooo tiny😩

I've bought some Kershaws steak pie and chips, Kershaws beef stew and dumplings and their roast chicken dinners. Lovely.

Also had a fish pie today, but gone off it as I've had it so often in the past.

I’m trying to be healthy at the moment so I’m making soups and homemade hummus and crudités at the weekend to eat in the week.

I rotate between lentil and bacon, casserole veg and brown rice (the easiest delicious soup ever!), pea and ham, and “compost soup” if I have veg leftover/past it’s best.

Today I had veg and brown rice soup with some air fried potato peelings (sounds weird but are very very nice) and I’m ready for my dinner now but haven’t been hungry in between!

In the summer Monday to Friday salads, winter soups. I'm very boring. But do Cook from scratch in the evening.

Saturday bacon roll, Sunday sausage bap or occasion a full English brunch

I don't plan lunches in the same way as dinners so they can be a bit random
M - salad with feta cheese and olives
T - tin of tomato and lentil soup
W - roast veg couscous and falafel left over from last nights dinner
T - probably the same
F - whatever I can scavenge

Monday I had bbq chicken and salad in a wrap

Tuesday I had a random mix of geeen beans, ham chunks, hard boiled eggs and homemade honey mustard dressing. It was utterly delicious!

Today I had a can of Heinz lentil soup and two slices of bread

I can have free lunches at work. I tend to prefer to take my own food but I'm trying to economise so this week I've been having the school dinners. Yesterday was a butterbean tagine-type thing with couscous, today was lentil bognese with spaghetti. I think tomorrow is some kind of curry. Friday is quiche which isn't usually very nice so I'll bring my own lunch I think.

I don't plan my lunches either. I just open the fridge/ cupboard and see what I fancy.
Monday - I took a packed lunch to my chemo session, hummus tomato bagel, crisps, apple and some biscuits ( was there four hours)
Tuesday - was toast with marmite.
Wednesday - had some left over Leek and potato soup that my daughter made at the weekend.

Not sure about today.

Ohh this is a handy thread - I get so bored with lunches. Do tend to get a bit stuck on the same things, partly for ease and partly because of lack of imagination. Bread is my main stay!

M - Poached egg and avocado on toast with some tomatoes
T - Scrambled egg and avo on toast with toms
W - Cheese and tomato baguette
T - Will finish the baguette - with either cheese or avocado
F - Working away, so whatever is available!
S - Likely to be poached eggs again
S - See above!

I'm actually planning to buy a soup maker this weekend - I find the fresh supermarket ones get a bit expensive, and I've got bored of tinned ones (plus worried about the added sugars!).

I have been buying a lot of the pre-cooked chicken thighs and freezing them, then eating with tin of ratatouille, or Jamie Oliver pouches.

Also nice with prawns (when they are on offer)

Low carb, high protein and veg and very warming/ filling.

I'm partial to an omelette with left over ham; or a nice thick soup

M - spicy butternut squash soup and a roll with ham (ham done in the slow cooker at weekend)
T - spicy mince & rice with oriental veg (leftovers from Sunday's dinner)
W - ham roll and lentil crisps
T - ? either smoked salmon & scrambled eggs on toast or the last of the ham with veg soup
F - which ever of the above I don't eat today!

Change of plan- DH has just come back from the school run bearing a steak and kidney pie proudly aloft. It;s very kind of him too as he is a vegetarian but he knows how much i love S&K pie!

In cold weather, I usually rotate:

a sort of egg foo yung with prawns with onion and mushrooms, with fresh kimchi

Seafood and kimchi with sweet chili and whatever salad vegetables I have

Homemade bao buns with hoisin vegan duck

Soup and cheese
