We make a 'Buddha bowl' with all sorts in, but themes by cuisine, so:
Asian: Marinated tofu, kale, grated carrot and brown rice with a peanut, sesame & soy dressing.
OR
Baked salmon, black rice and charred broccoli with a soy sauce, lime & chilli dressing. Sometimes with a semi-hard boiled egg.
Mexican: Brown rice, sweetcorn, cherry tomatoes, avocado, peppers and protein of choice, cooked with fajita spices and topped with cheese/sour cream.
Middle Eastern/Mediterranean: Cous cous, baked Mediterranean veg (courgette, tomato, onion), crispy baked chickpeas, hummus, maybe babaganoush. Could add chicken if you eat meat.
