If you eat lots of lean protein and veg, what do you eat?

Have been pondering this as I contemplate eating more healthily in general.
Everytime I see ‘eat lots of lean protein and veg’ I imagine grilled chicken or fish and steamed vegetables which sounds so bland!
How do you make eating this way tasty and with variety?
Btw, I’m fine at cooking etc, but can’t seem to think how to make eating this way exciting enough to keep up!

I’m sure you’re right….I should do some proper research! I wish someone would deliver me gorgeous healthy lunches and dinners every day 😂

I guess I do. I use lots of chilli, fresh herbs, carribean spices, Indian spice blends. I also often add yoghurt on side of veg. I think I have very flavoured food.

Curry.
Vege bolognaise with lentils.

Marinated chicken breast (I use Greek yogurt, tomato purée and hot curry powder) bung in oven for 20 mins. Serve with massive salad, finger chillis and more Greek yogurt…but I like spice!

any white fish with a lemon butter sauce (literally just a bit of butter, lemon juice and lemon zest) and loads of steamed veg

Lean pork steak and steamed veg….can be a bit bland but I usually save some real gravy from the weekend roast and that makes it nicer!

I do lots of casseroles, tagines, curries, etc in the pressure cooker and I put in lots of beans/pulses/lentils in addition to what the recipe says, instead of cooking white carbs to go alongside.

We make a 'Buddha bowl' with all sorts in, but themes by cuisine, so:

Asian: Marinated tofu, kale, grated carrot and brown rice with a peanut, sesame & soy dressing.

OR

Baked salmon, black rice and charred broccoli with a soy sauce, lime & chilli dressing. Sometimes with a semi-hard boiled egg.

Mexican: Brown rice, sweetcorn, cherry tomatoes, avocado, peppers and protein of choice, cooked with fajita spices and topped with cheese/sour cream.

Middle Eastern/Mediterranean: Cous cous, baked Mediterranean veg (courgette, tomato, onion), crispy baked chickpeas, hummus, maybe babaganoush. Could add chicken if you eat meat.

Place marking really as my gut loves this way of eating and hates all carbs apart from rice but my offering is huge stir fries with marinated tofu or prawns and loads of soy sauce

Also my favourite meal of all time (just happens to be vegan but I'm not) baked tofu with sesame seeds seved with crispy salty oven baked kale, quickly pickled thinly sliced cucumber (rice wine vinegar), satay sauce (smooth peanut butter, soy sauce and mirin)

2 very nice and easy marinades for chicken are:

  1. 3 tbsps natural or Greek yoghurt with 3 tbsps of Pataks Tikka paste and a couple of cloves of crushed garlic.
  1. Juice of a lemon with couple of tbsps olive oil, 2-3 cloves crushed garlic, and 1 tsp dried oregano.

Put chicken breast or thigh into marinade for a couple of hours and then cook in oven or grill (barbecue nicer but not at this time of year!). Have with salad. Very healthy and tasty.

Just had a lovely cheeseless omelette for lunch - onions, garlic, sliced mushrooms, tomatoes, fresh spinach lots of salt and pepper.
