What can I batch cook?

Tomorrow I'm planning on shopping, cooking and freezing several batch meals. Need to find some decent pots as well but please can I have some suggestions for what freezes well?

All the usual chilli con carne, spaghetti bolognaise, lasagna can be made from a basic mince base then add chilli, herbs etc then layer up for a lasagne.
Curry, fish cakes, soups also freeze well.

pasta sauce - even a veg and tomato type sauce that you add things too later that you throw in when it’s defrosted

Thank you I'm visualising a very neat and tidy freezer full of meals. Although need to defrost it first and no idea how to do that!

Shepherd's pie, fish pie, stew, goulash, chilli, bolognaise, curry, lasagna, veg lasagna, pasta sauces, chicken casserole, Hunters chicken ( prepped but frozen uncooked), ratatouille, pies,.
I do lots of batch meals for the freezer.

when I have fresh chicken I split it in portions in freezer bags, season each portion in the bag with different spices and freeze. In the morning I take out a freezer bag of frozen chicken, let it defrost and marinate in the fridge then toss them in the air fryer for 35 mins after work:

I need a bit of inspiration too. These are what I already do:

Cook a load of mashed potatoes. Mix half with flaked fish for fish cakes. Other half with frozen peas and sweetcorn and some sautéed onion, carrot and celery. Season both mixtures and add chopped parsley if you have it. I also add a lot of grated cheese to both mixes. Shape fish cakes into rounds and veg/potato mix into croquettes with floured hands. Dip in beaten egg, and then in a bit of grated cheese and breadcrumbs. Freeze in tray until solid and then in bags..

Lasagne/Shepeherdess pies. Vegetable ragu/bolognese mix made in instapot using whatever veg and tinned tomatoes. She pie - cook in some lentils and cooked white beans (or from tin). Half fill containers that can go in oven or air fryer. Just need mash on top. For lasagne, layer ragu mix with lasagne sheets and cheese sauce. I make four at a time - one for dinner and three for freezer.

Flapjacks (good for breakfast or snack on the go). Cookie dough to keep in freezer and bake as needed (divide it up).

I do this too but freeze in cooking bags so I don't even have to take it out of the bag to cook, tastes nicer too.

I batch cook spaghetti bolognaise, lasagna, chicken curry, chicken / steak pie, salmon en croute and garlic / white wine chicken casserole type thing.

Do you like lentils? Curries/daals with them in freeze well. Or the burnt aubergine chilli on BBC good food site.

Most soups also freeze well

I make a big batch of basic semi-veggie mince (red lentils and lots of finely chopped veg - any root veg and mushrooms added) which then turns into bolognese (garlic, lots of tomato purée, garlic and oregano added), chilli (lots of tom purée, chilli powder, paprika and kidney beans added) and what we call School Dinner Mince (dh loves it, believe it or not), Worcester Sauce and some baked beans added.

Any kind of casserole

I do

  • beef short ribs in red wine or stout
  • lamb shoulder with spices and chickpeas
  • Moroccan chicken (cooked in stock and spices)
  • sausage and lentil

Falafel freeze really well

To defrost - if you’re organised, leave out on the side until defrosted and then stick in fridge. If not, use microwave. You can defrost liquidy things (sauces, soups, casseroles, chilli) in a saucepan on low heat with a lid, add a bit of extra water and stir regularly.

Plastic food storage bags designed to go in the freezer - they are on the thicker side and often have a ziploc closure. They protect things like meat from freezer damage better than the thin bags. I wash mine out and reuse them multiple times.

The plastic rectangular tubs that some takeaways come in are good to wash and reuse for batch cooked meals in the freezer. If you don't have any, ask friends or family who do, to save them for you.

Totally agree Justmuddling in fact we choose who we get takeaways from partly based on whether they have the right tubs 😆
