Dinner to make the Inlaws

What should I make for the in-laws? Mil is quite a good cook I need something easy as I am not great cook. But not so easy that I look pathetic ! I was thinking spag Bol but they aren’t so keen on red meat.

I made a slow cooker chicken tikka masala last weekend for my ILs! BBC good food recipe, so easy and delicious

Thanks I did wonder about tikka masala. But I haven’t got a slow cooker so will need to do one without that

Salmon with new potatoes and green veg
Chicken curry with rice/chips
Lasagne
Chicken breast wrapped in bacon with homemade chips and sides.

This is good - I leave out the carrots as a personal preference, but it's easy to make and is only one pot so easy to wash up

I’d do a lasagne with garlic bread. Easy to prepare in advance then slip it into the oven when they’re nearby. Side salad pre-prepared in a bowl and buy a dessert.

The hairy bikers chicken tikka masala is lovely. It does take a bit of effort with the marinating the chicken and making the sauce but it tastes really nice.

Another easy but really nice one is Marry me chicken

Chicken breast or thighs (I used skinless and boneless thighs)

Garlic

Red pepper flakes ( I left out)

Chicken stock

Heavy cream ( I used double)

Parmesan cheese

Sun dried tomatoes

Italian mixed herbs

Fresh basil for garnishing

Season chicken on both sides with salt and pepper and fry on both sides until browned

Remove chicken from pan and fry crushed garlic cloves for 1 min

Add chicken stock and double cream and stir continuously until starting to thicken, add in Parmesan cheese, sun dried tomatoes mixed herbs and red pepper flakes if using. Keep stirring until sauce thickens up. Some recipes call for flour to thicken the sauce. The one I used didn't. Add chicken back in and cook until chicken is cooked all the way through. Sprinkle with fresh basil

Serve with whatever you want. I had mine with mash and veg but it's also really nice with pasta as well.

I'd do a casserole in advance then heat it for their arrival. Chicken with tarragon, or chicken tagine or similar, the flavours will develop beautifully. Serve with mash or rice and green veg.

Frees up time to freshen up the place or yourself before they arrive.

Go for a tray bake bbc good food have loads of ideas. Fish, chicken, haloumi all work well. And not tons of washing up at the end. What's not to like?
