Best flapjack recipe please

I like it more soft than crunchy - like the ones you can buy in a service station in a wrapper (but they don't taste nice hence making my own). I had a recipe from the paper years ago but lost it ! Help me vipers ! Thanks

These are raved about when I take them into work. I avoid the blender business and just melt the butter, sugar & syrup in a pan then stir in the oats. Always cut them when hot out of the oven but don’t even attempt to lift them until they are ice cold or they don’t hold together.

I have just found a ridiculously squidgy microwave flapjack recipe which is so gooey I can eat half the (small) batch in one go! I will go and find the link.

I think the trick to soft is to not overcook it.

Here it is. A few alterations, I don’t put any of that health fruit in it Grin I like my flapjacks to just be flapjacks!
I use light brown sugar or they tend to look too anaemic & I’ve found they work best in my microwave at 2 mins on full then rest for 1 min, 2 mins on full then rest for one min and a final 2 mins on full. So, still just 6 mins heating but doing it 3 & 3 left me with an over cooked bit in the centre.
She comments on a later video that you can toast the oats for a more golden flapjack & then mix butter, sugar, flour in the same frying pan before microwaving but I haven’t tried that version. I don’t mind mine looking a little pale.

DH likes less squidgy so I do him a batch in the fan oven at 160 for 40 mins.

240g of flour and 240g good quality oats. Sultanas, cherries or dried apricot pieces, or just leave fruitless.
120g sugar, 240g butter and 90g golden syrup, melted in a pan. Add oats and flour, mix, spread in a brownie tin, cook for 10 mins. Wait until completely cold to turn out and cut into squares (makes 16 delicious chunky little squares).

The one with condensed milk definitely, earily close to legendary marks and spencer flapjack with bits of chocolate you find in the fridge section by the sandwiches, food of the gods!

Adding some flour to any flapjack recipe will make the flapjacks softer rather than crunchy ( whilst you wait for the soup dragon recipe!)

This is SoupDragon's recipe:

SoupDragon’s Flapjack
250g porridge oats (the cheap type, not large ones)
150g butter
2 generous table spoons golden syrup
half a tin condensed milk
100g demerera sugar
baking tin, no bigger than about 18cm x 28cm
Method:

  1. Preheat the oven to 160 degrees c
  2. Line the baking tin with baking parchment.
  3. Melt the butter in a large saucepan over a medium heat and add the sugar and syrup. Keep gently heating and stirring until all is melted and mixed. If it starts to boil take it off the heat!
  4. Add the condensed milk and mix. Bring to the boil for about a minute.
  5. Remove from the heat and gradually add the oats, folding them in. All the oats should be coated, and the mixture quite dense, but still sticky. Don't add so many oats that the mixture becomes dry.
  6. Pour the mixture into the tins and spread about so that it lines the tin to a depth of 2-3cm. Don't squash the mixture in, just spread it evenly.
  7. Bake in the oven for about 15mins. You should take them out when they just start to go brown round the edges, don't leave longer than this. If they're still squidgy in the middle that's fine, they set on cooking.

Blimey, flapjacks are calorific enough, especially the amount I eat. I’m not sure I’m brave enough to eat them after adding an extra 650 calories of condensed milk to the mix!
