Anyone making soup on this grim grey day? If so, what type?

I have a butternut squash sitting here that I would like to make into a nice soup. Never tried it before though. Also got some broccoli that needs using and a chunk of blue cheese - that's always a nice combo. Anyone else soup making today?

We made a load of chicken stock in the slow cooker a couple of days ago that I'll turn into chicken soup later!
Love butternut squash soup - definitely going to make some this week

I’m going to try my kids on lentil soup. They’ll probably run a mile but I loved it as a child, and have only learnt as an adult that my mum made it because it was so cheap and we were poor.

I do a lovely butternut soup. Add onions, garlic plus whatever else is languishing in the veg drawer. A few curry spices and about a quarter of a bar of creamed coconut, plus seasoning. Bloody lush.

I'm doing matzo ball soup! It's basically a really lovely chicken broth soup, with dumplings - perfect on a winter day.

Lentil soup. Easy, we all like it and I always have the ingredients in...I just make it with onion, carrots and lentils, occasionally add a potato close to the end of cooking if it is looking a bit thin.

Helpfully, I've just looked in the fridge and have no onions. Would celery be a substitute or is it better to wait for shopping to come later?!

Loving the lentil soup ideas also - lentil and bacon is a firm favourite! Ohhh and the dumpling soup...!!

Moroccan lentil. Onion, garlic, cumin, splash of maple syrup. Brown, then add chickpeas, tinned tomatoes, veg stock / Bouillon powder and red lentils. Hand blend towards end for a smoother texture but leave some chunkiness. So warming!

A really easy but delicious soup is,

Take 3 fennel And 3 large leeks. Chop finely.
Sweat down in loads of butter until really soft but not brown.
Add a litre of water with some veg stock in.
Blitz until silky smooth.
Add salt / pepper

So easy & delicious!!!

I like roasting the squash first, with cumin and coriander. Adds a lovely flavour.

I also can't get enough of lentil or any bean soup, but my thoughts have been learning towards potato soup. Used to have it as a kid and for some reason I've been thinking about it all week!

This soup is epic (but not cheap) for if you were having friends for lunch or dinner or just fancied a treat.

I'm not a fan of cheese in soup. I often make cheese scones to go with the soup, but no cheese in the soup for me.

oooh great thread!!

I have been making soup alot this week because I am trying to get more variety into various Dcs who have food issues.

So far i have made;

Cream of carrot - using onions, celery, garlic, tinned carrots, loads of nutmeg, vegetable stock and then pureed and added single cream. - Gorgeous and I think I will never use a raw carrot again.

Cream of spinach - onions, garlic, celery, tin of drained cannellini beans, 10 little nuggets of frozen spinach, loads of nutmeg pureed and then cream - gorgeous the next day. Dcs tolerated less than a teaspoon but DH and I loved it.

Cream of celery - leeks, an entire celery head, garlic, a little bit of poatto, veg stock pureed then added cream and nutmeg and black pepper - light, lovely.

My favourite soup though is one my dad makes. It is a hearty winter soup. cook diced onions, garlic, celery and carrots. Then brown off meatballs (I just use the ready made beef meatballs). Add beef stock and red wine. Add tomato passata or a jar of pasta sauce. Cook then add fusilii pasta and cook until soft. Serve with parsley and grated cheese and garlic bread. Italian meatball soup.

My usual multi-veg one, since I have lots, with some red lentils and maybe pearl barley. Not blended, veg all chopped small. Onion, celery, carrot, potato, swede, celeriac - so whatever I have but must include onion and celery.

Leek and another green veg last few minutes only.
Chicken stock from a cube though I’d use home made if I had any.

I've put cawl in the slow cooker, using beef. Served with cheese and crusty bread, and will last the next few day.

Leek, potato and bacon soup, made in the instant pot. Or broccoli and Stilton, or tomato, although I would have to buy ingredients for the latter two.

I have to have blended soup though, can’t abide lumps. So even with tomato, once I’ve blended it I have to strain it to get rid of the seeds etc.

I’ve been making soups because it’s an easy way to increase our veg intake at lunch time and it feels very autumnal (plus freeze well). Unfortunately, my three year old is not a big fan and has to be bribed to eat any :(

Last weekend I made courgette, potato and cheddar soup (a bit bland) and spinach, sweet potato and bacon soup (lovely). Both recipes adapted from bbc good food.

Lots of these soups sound lovely!
