Keen bakers this way please-bakes for work

I work from home mostly but come into the office once a month for company meetings. I love to bake and usually bring in something when I'm in the office. So far I've made caramel shortbread, Jammy dodgers, salted caramel cake and bakewell tarts. I like to choose things that can be easily shared around with a cup of tea. Any ideas what to make next?

Tray bakes that can be cut into equal portions maybe. All sound lovely, if quite rich. Personal preference would be a nice sponge, either vanilla with not too sweet topping, or with fruit, or chocolate/coffee sponge.

Flapjacks/scones… list is endless! Maybe you should have a mini competition and the person who wins gets to choose with all money to charity?

school cake is a favourite in my office. I’m making some tomorrow for Thursday/Friday (there is a change of shift in the factory but I work M-F, need to keep everyone happy. 😉🤤)

Parkin is very popular this time of year. Super recipe on BBC Good Food, but I use my mum’s old one. It’s best if you make it 2-3 days in advance and wrap in baking paper and foil or cling film. Cut it into squares as you serve it.

The bake I made which got massive compliments was a quality brownie mix which I added chopped Chocolate Orange too. I then layered pieces on top too.

I’ve just made some cakes for work and have done a lemon drizzle cake which always goes down well, I’ve also done some banana bread and some chocolate crinkle cookies from the bbc good food website, the biscuits were pretty quick to make

What about something savoury for a change? Not everyone wants sweet things all the time. There's a BBC recipe for Easy Cheesy Biscuits which really are simple and delicious - I use paprika instead of mustard powder.

My signature recipe is actually cheese straws. It was the first thing I ever learned to bake and is my grandmas recipe

Refrigerator cake. We always used to make it for school fairs. Easy to do with no baking. It always sold out very early (the PTA used to buy it before the punters could Grin ) Also made some for school staff and they fell on it like wolves.

We used the BBC Good Food recipe but changed some of the currants for chopped apricots for a bit more of your five a day Wink and didn't bother with nuts or soaking stuff in brandy.

4 oz unsalted butter
8 oz plain flour
6 oz grated cheddar cheese
2 egg yolks plus a few drops of water
1 tsp Worcestershire sauce
1/2 tsp smoked paprika
1/4 tsp cayenne pepper

Mix butter and flour together with your fingers to make fine breadcrumbs then add in the grated cheese

Whisk the egg yolks with smoked paprika and cayenne pepper. Add about a tsp water

Add egg mix to dry mix. Mould into a dough. If too dry, add a little more water. Roll out and cut into strips.

Cook for 12-15 mins at 200 degrees until golden.

(I usually double the recipe as my kids eat the first batch the minute they come out of the oven!)

I used to bring in traybakes and cakes weekly where I worked.

I used to get free pears, apples and plum from a neighbour, and sometimes bought sponge mix- then sliced the fruit on top, sprinkled extra brown sugar and cinnamon or mixed spice on top and baked. Much quicker than completely from scratch, but I do both depending on time.

I've also bought pastry cases and filled made blackberry, passionfruit, lemon or caramel filling to make tarts. I'm not great at making pastry, but do make from scratch sometimes. If in a hurry though- pre-made is alot quicker!

Ideally, I use anything foraged or fruit needing to be used like black bananas, blackberries, apples pears etc.

Tiffin always goes down well.

I make a version of this thefoodmedic.co.uk/2019/12/christmas-tiffins/ using plain digestives instead of ginger nuts and it gets loads of compliments. It’s quick and easy to make too.

Coffee and walnut cake using the guardian ‘make the perfect’ recipe was my biggest hit in the office. I made it as butterfly cakes. So many people wanted the recipe or begged me to make it again.
Dundee also went down well.
