Anyone know how to double cook lasagne sheets?

DS is type 1 diabetic. We have found through, trial and error, that pasta if cooked, cooled and reheated, doesn’t cause a blood glucose spike. I would love to make a lasagne - but I don’t want a night of chasing highs (which is not the fun it might sound) so need to double cook the sheets first. How?! Thanks.

My mum used to do this back in the 80’s (not sure why?). She had a big pot of boiling water, put a few sheets in at a time, then fished them out and cooled them on a tea towel. Then layered up the lasagna as normal.

That's how I make it too - surely it's a bit dry otherwise?

I don't cool them though, just put into a bowl full of hot water for 5 minutes and then tip into a colander with some olive oil.

Is it though? I have just turned 49 so not exactly a spring chicken and I have never pre-cooked lasagne sheets!

How long do you reckon to boil them for?

If it sticks together just cook some penne , tip in the bolognaise sauce and once its in the dish before going in the over swirl in your white sauce , it tastes exactly the same

That actually sounds a lot less arduous! It also means I can rinse off the starch before cooling. Good plan!
