All day breakfast

Looking at that menu, we eat too much meat. We do one veg and one fish dish each week but I'd like to up it to half and half.

I've just done an order:
I'm going to try to invent a veggie jambalaya type thing with Richmond fake chicken because DP likes it
Also some sort of veggie soba noodle stir fry
gnocchi with roasted vege
omelettes with peppers/mushrooms
maybe a quinoa salad with feta and beetroot
rice and peas with mango salsa and bought Jamaican style pasties

Friday: Veg Pizza and garlic bread
Homemade if I can be arsed.
Sat: Pasta and veg sauce with cheese
Sun: new spuds, veg plus sausages/bean burger
Mon: Stuffed pasta, pesto, mozzarella and garlic bread
Tues: fish fingers chips and peas
Weds: veg curry with rice/chapattis
Thurs: sausage casserole.
DD1 will have beans on toast as she's out early evening.

There's very few things that everyone eats - there's 4 of us. One veggie, two don't eat chicken or spicy, one won't eat beans and neither DC eat fish.

It's boring but I refuse to cook two or more meals per night. After many a refused meal I also refuse to put in any effort unless on my terms.

Fennel seed ragu (from freezer) with pasta
Potato, kale, broad bean & chorizo stew
Steak & cannellini bean salad

Out two nights and don't know about Sat yet.

This week has been haphazard with plans changing and meals switching to suit. So far it has been:
M: Spanish omelette with potatoes and spinach (finally learnt how not to burn the base. Tip the hot veg into the bowl of cold eggs, then back into the pan).
T: Sausages and potato croquettes.
W: Veg soup.
Th: Hamburgers and blue cheese.

F: Family dinner. Roast chicken, veg and pineapple u/d cake.
S: Salmon and green beans.
Su: Pizza.

Lunch is usually leftovers, quick pasta or salad with cheese etc. Fresh fruit and veg with every meal.

I have changed tonight's meal for the DCs as they are having their second covid jabs and I decided I would make them something treaty. So they are getting chicken nuggets from Aldi (real mini fillets so not too bad) with a mini pizza on the side and yellow pepper sticks. They will be thrilled.

I am having a craving for avocado so will still have the previously scheduled quesadilla with avocado and peppers. Yum!

Tomorrow slow cooker beef ribs with corn and wedges. Then I get to plan the week ahead again tomorrow night! I am definitely going to use this thread as an inspiration.

There was a MNetter whose name I have sadly forgotten who very often makes as her family's treat meal something like creamy chicken and onions on a bed of tagliatelle. I have thought for ages I really have to try that. If that MNetter happens to be on the thread would they mind giving me the recipe? I would be enormously grateful!

I have this planned (and shopped for already).
Tonight - pork steak, homemade seasoned potato wedges, salad, coleslaw
Sat - Chicken Kyiv, new potatoes, veg (probably broccoli and sweetcorn)
Sun - Boneless Chicken thigh/root veg slow cooker casserole with roast potatoes, stuffing, steamed cabbage/broccoli
Mon - Sunday Dinner pasties with veg (basically the leftovers from the casserole and the trimmings), made into ‘Cornish Pasties’ served with additional veg (probably carrots and peas) and gravy
Tues - Spaghetti Bolognaise (batch cooked from the freezer)
Wednesday - Sausage, egg, beans, grilled tomatoes and potato waffles or toast
Thursday - Cottage pie and veg
Friday - Goan fish curry and rice

I think it's this one.

DH makes it, uses red wine stock pots instead of actual red wine and lean mince to reduce the calories on it. Good for making a batch to have some in the freezer.

I love these threads have found so many new ideas to expand our meals. This week I’m getting lots of use from the slow cooker, batch cooking for the freezer and leftovers for lunch.

Sunday - Roast beef, roast potatoes & parsnips, cauliflower & broccoli, runner beans. Yorkies & gravy. Sticky toffee pudding.
Monday - Panacalty with green veg.
Tuesday - Spaghetti Bolognaise with garlic toast.
Wednesday - Chicken curry with rice & naan
Thursday - Chicken, leek & blue cheese pilaf
Friday - Steak & Stilton pie with chips & peas
Saturday - Mexican crunch wraps, sweet potato fries & sweetcorn

Sunday - roast chicken, roast tatties, carrots and parsnips, brocolli, skirlie and Yorkshire puddings
Steamed sticky toffee pudding for pudding, with a good bottle of red

Monday - hoisin chicken noodles with peppers and onions, prawn crackers

Tuesday - pasta Bolognese with garlic bread and salad

Wednesday - chilli and baked potatoes

Thursday - chicken and rice soup with nice bread

Friday - Jamie Oliver meatball subs

Saturday - chippy tea as out late

Sunday - lasagne, salad, garlic bread

Leftover roast chicken and spinach curry today.
Tuesday Roasted veg (courgette tomatos onions peppers mushrooms) with pasta and pesto.
Wednesday Chilli con carne (with chicken mince, and lots of veg)
Thursday spaghetti Bolognese and salad and garlic bread with quorn mince.
Friday homemade pizzas.

This is us this week;

M - scrambled eggs with smoked salmon and bagels
T- flattened chicken breasts cooked in a cream, honey and mustard sauce with rice and a green
W- Aldi surprise- probably a vegetarian lattice of some type
T- crumpets and jam, ham sandwiches and fruit
F- spagetti bolognese.

Tuesday - prawn stir fry
Weds - baked potatoes and cheese
Thursday- vegetable chilli
Friday - Salmon and rice
