5 minute/store cupboard desserts?

Having a mind blank. (Lovely) PILs coming tomorrow night but for a quick dinner before we go out somewhere. Feel like we need some kind of dessert but won't have any time to make my usuals. Not keen on shop bought cheesecakes etc unless anyone has any recommendations for ready made desserts that don't taste artificial?
All eat everything except alcohol (dc will be having pudding) and one doesn't like bananas.

Thanks

Grilled pineapple topped with Greek yogurt and a sprinkling of cinamon, takes no time at all. Used tinned if you want.

Fresh fruit selection

whizz up a bunch of fresh mint with sugar. Sprinkle over fresh pineapple and blueberries. Serve with Rachael’s organic coconut yogurt. It’s a Jamie Oliver recipe. Quick and tastes amazing!

Pancakes?
rice pudding?
shop bought lemon mouse and biscuits
mashmellows toasted on a tea light and some melted chocolate to dip in?

You could do Cranachan if you have raspberries and leave out the whisky. You only need to toast some porridge oats, have some whipped double cream, some runny honey and raspberries. Serve in nice glasses and the jobs done.

I made www.bbcgoodfood.com/recipes/fastest-ever-lemon-pudding this the other day and served it immediately with marmalade syrup not lemon curd. We were all blown away because it really WAS sponge pudding.

I've just read that recipe. How do you turn the cake over?

Lemon syllabus - greek yogurt, lemon curd, juice of a lemon and zest on top. Five minutes tops.

Have you a COOK shop nearby ?

Cucumberbund · 06/09/2022 22:41

Crumbled up cake or biscuits, (I love Jamaican ginger cake for this) scoop of ice cream, raspberries and hot chocolate sauce which is just cocoa and sugar blended with a bit of hot water.

Jar of these www.thebaytree.co.uk/marinated-mini-figs and some mascarpone - dupe of the 'caffe reale' mini dessert from Pizza Express.

@JamMakingWannaBe
“Turn half way through” means “Stop the microwave and make it rotate in the opposite direction”.

You made me laugh @motherstongue ...

I have no raspberries, I have no cream, I have no honey and I have no oats.... I do have whisky...🥂

It’s one of our favourite puds! Not in a pot though - in a little water glass so you can see the layers. We all put in what we want - compote layer, Greek yoghurt layer, honey layer, crunchy stuff on top or chocolate drops, or pistachio creme layer (or sweetened chestnut) if we have it in.

It all sounds delicious and I'd happily eat it at home at any time, but I don't think I'd serve it to anyone.

motherstongue · 07/09/2022 17:40

@BeyondMyWits in my opinion, whisky is the only ingredient needed. However, it has to be said, with the other Cranachan ingredients it is sublime.

Could do a galette with shop bought shortcrust pastry (ready rolled easier still) make up a frangipane (cream brown sugar and butter, whisk in egg, fold in ground almonds), then top with your choice of fruit (e.g. peaches). Bake for 30 mins then drizzle with warm jam and eat with ice-cream. Total input time is about 8 minutes but obviously baking etc extends so might not be suitable.

The most obvious quick desert is Eton mess with whipped cream and shop bought meringues and summer fruits. I have also done it with that but replace the summer fruit with banana and a tin of carnation caramel. Given one doesn't like banana they could maybe have apple instead to make it a toffee apple mess?
