Being near the Mexican border, I'm able to get the homemade ones called chicharrones...even more delicious because there's a bit of .meat attached...DH just bought me an entire pound.

When it's cut off the joint its called Crackling here too SP. Something very similar is also avaliable dried, in little packets, when it's called Pork Scratchings. Very popular in pubs to have with your pint or whatever!

I don’t like the crackling’ no g you buy in pubs as a snack . I like it hot, crispy, and oozing gorgeous fat juices.
