All out of ideas for food next week

I am working late all next week; won't be in until about 815pm every day mon-sat. Will be the same the following week too.
I usually cook stuff on the hob or in a slow cooker - i don't want to put the oven on (I cook a roast most sundays and chuck cakes/muffins/jacket potatoes in then, treats for the week) so traybakes or pies etc are out.

Can you inspire me? I don't eat meat more than every other day (today was pork so monday should be vegetarian, etc - and there are no leftovers from today)

I usually do a curry (slow cooker) for one meal, and am thinking DS3 can fry up some burgers one day so will get buns/salad/coleslaw etc for that. Maybe sausages again one further day.

What else? Totally out of ideas. Something I can cook in the morning and then jsut heat in the microwave or in a pan would be best.

When we're training we do a large pasta salad with things like kidney beans, broad beans, peas, edamame, asparagus, cucumber, tomatoes, sweetcorn, radish and stir either pesto, mayo, homemade spinach pesto through. Eat for dinner and lunch.

Red lentil dhal, egg and pea curry.

Ratatouille, which you could make the night before and then serve with pasta
Tomato Omelette, make the omelette in the morning and reheat in microwave or just serve cold with oven chips or cold new pots and green salad.

Oh Yeah, Pasta with tomato sauce (with bacon or mushrooms as nec) I'd forgotten! That'll be on the list.
The salad - I would love. DS not so much, but he sometimes cooks for himself so i'll keep that in reserve for me!
Beans - I do a bean casserole (open lots of tins, heat an onion and maybe bacon or chorizo on a meat day) so that's a possiblity.

When I get stuck I buy double of everything and serve it 2 days in a row. Veg curry x 2, carbonara x 2 (cooks in 10 mins), sausage casserole x 2, and one of those Chinese veg packs with sauce and noodles.

Slow cooker veggie tagine - this keeps well in the fridge (the flavours seem to develop and intensify) and also fan be frozen. I normally serve with couscous which takes merely 10 mins max but can be eaten with flatbreads instead.
Veggie fajitas - the pepper mixture reheats well.

A couple of Meera Sodha recipes spring to mind (obviously don't know what you have in your store cupboard though!) Food processor is needed for both of them...

All great ideas, thanks! @Fivemoreminutes1 those recipes look just the job, I will be trying them both Grin
I am reminded of omelettes - but to reheat I'd rather do a spanish omelette, thick with sliced potatoes and chorizo or mushrooms, and peppers.

So far I have made a tomato pasta pan for tonight, and got sausages out of the freezer for tomorrow - any leftovers (haha) will go in a bean casserole for Wed. Thurs I will do a pepper pasta dish (thanks @YetAnotherWalk ) and Friday I am home early enough to do a stirfry which we can eat hot.
Saturday - I'll prob chuck some veg in the slow cooker for a veg curry @myrtleWilson so hopefully that will be it this week!

Next week - I'll be making a veg/lentil shepherd's pie in the oven on Sunday and I'll cook some baking potatoes in as well, to reheat in the microwave on monday with coleslaw and beans.

Tues I'm thinking the big salad with new potatoes and maybe a tin of tuna mixed in.
Wed - prob try the pepper fajitas as I have some flatbreads.

I do spag bol, chilli, curry, porridge, Mac & cheese, stew, beef & noodles, lasagne, sausage casserole, ragu all in the slow cooker

Thanks @pogostickplastique , can I ask for your Mac n cheese slow cooker recipe? I do all the others (although in a pan for spag bol etc) but mac and cheese in a slow cooker sounds good!

one of those pork loin joints cooked in oven at weekend = cold meat with salad and part baked bread for someone to bung in oven ,and then any left overs in quiche ?

Lentil soup or dhal? Sauté a chopped onion and carrot, (some curry powder or chilli and cumin if making dhal), chuck in a few handfuls of lentils and a couple of veggie stock cubes, add a few pints of water, season, bring to the boil and simmer for 20 minutes (or just leave to steep in the hot water). You’ll have a lovely big pot of delicious, healthy, vegan soup. Serve in a bowl with bread, cheese on toast, or rice.

Thanks all, I have the oven on once a week for a roast and will hopefully have leftovers from that, which I would dish up with salad/pasta or rice etc next day. I wouldn't heat the oven again on Mondays just for a part-baked loaf, or to reheat roast veg. Shock
Stir fries - I don't want to do that in the morning then have it reheated at 830pm! I think the point of a stir fry is to have it hot and al dente. I do them regularly when I am home for dinnertime.
Lentil soup/any flavour soup is something that I do regularly in the autumn/winter months, and agree it is warming, filling and cheap. And happy to sit available at all times, which is the point of this thread.

Today I've put all the factors of the big salad ( @LuciferRising ) in the fridge, chopped tomatoes, cucumber, sweetcorn, tuna, olives, lettuce etc. Then DP and ds can just chuck what they want together with mayo or dressing. And i'll have whatever's leftover later!
