Can you recommend me a simple low-carb veg soup?

Hello

I'm minded to get more veg down my throat and it's time to put the salads away.

I'm TERRIBLE at cooking so can you give me the world's simplest recipe for soup? I'd like to avoid potatoes/lentils but get in plenty of veg, esp green stuff.

I love this one handwritten one is an instant pot recipe so if on the hob just cook till ready approx 20 mins

Our favourite is red pepper soup made with onions, tomatoes and red peppers. Proportions depend on what we have/want to use up. Sometimes, I roast the veg (if the oven is on) and sometimes, I just soften it in a little oil in a pan. Season, add water and simmer until veg can be liquidised.

Vegetable base (frozen), some other sort of frozen veg (broccoli, cauliflower, sprouts), veg stock, salt and pepper.

Chop up whichever veg you prefer (including onion or leek boosts the flavour) and sauté with a splash of vegetable oil in the saucepan for about 5 minutes.
Cover with water (if you want a thick soup don't quite cover the veg, for a thinner one add more water) and bring to the boil (I stopped this up by using boiling water from the kettle).
Add stock (either a cube or a gel pot, if you're making 1-2 portions add half the stock and keep the rest in the fridge).
After boiling for a couple of minutes, turn the heat down and simmer for 10-15 minutes, then turn off the heat.
(Optional) blend with a stick blender until smooth.

Once you've made soup a couple of times it'll be super easy, and you can use whatever veg you have in the fridge. You can start adding herbs and spices if you want to get more adventurous.

Red pepper and carrot are quite carb-y.

Broccoli soup is good, or spinach, or courgette.

Cream of mushroom.

2 packets of mushrooms, an onion and 2 vegetable stock cubes. Cook for about 15/20 minutes then blend and add cream at the end. It's delicious.

Thank you everyone! Adding everything to my tesco online shop. Will do a batch of all different ones and see what is easiest to make, makes the least mess and tastes the best!

My mother is suggesting I cook soup in the slow cooker rather than buy a soup maker. Any thoughts?!

Soup maker (second hand cheap from eBay) is a game changer. It shouldn’t be different from pan /stick blender but it really is.

Chop an onion. Melt in a glug of olive oil and a knob of butter. Add garlic, chopped mushrooms if you like and cook down. Add a bag of frozen casserole veg, celery, tin of tomatoes or whatever veg you fancy, table spoon of tomato puree, bay leaf, fresh thyme or favourite dried herbs. Sweat everything down. Add a litre of stock. Green beans and beef stock for a minestrone vibe. Or red lentils and curry spices are good too. Simmer until it's the veg is soft. Leave jt chunky, squish half of it with a potato masher or blitz the lot. I do a variation of this every weekend.
