Recipes for beans and pulses

Hi,

Ive been advised to eat more beans and pulses in my diet but I am clueless as never used them before. Shop bought ready prepared ones seem nice but I am looking for easy recipes. Can anyone recommend anywhere? Thought perhaps I could make a large batch in advance to have some each day with salad/chicken/fish?

I chuck roasted chickpeas in all my salads - just rinse tinned chickpeas, coat them in some oil and paprika, spread on a baking tray and roast for about 25 mins at 200C.

My husband chops up some chorizo and fries it up till it's slightly crispy, then chucks in a can of chopped tomatoes and a can of butter beans (strained) then serves it up with toast. It actually tastes nice Smile

We eat them a lot as we try to have as many vegetarian and plant based meals as we can (I do eat a fish sometimes though).

I tend to buy the beans canned in water but usually get the dried lentils, although canned ones are good too and the little pouches of mixed grains and lentils
also make a quick, easy change though can work out expensive.

You can chuck rinsed, canned beans into any soups really, or some red lentils.

I like this as a meal in itself, and it freezes well for batch cooking, but also once you’ve mastered the lentil sauce/ filling bit you can just make that and use it as a pasta sauce like a bolognase, or as a jacket potato filler - thehappyfoodie.co.uk/recipes/vegetable-and-lentil-cottage-pie/

You can make bean chilli quite easily, then serve with rice or with wraps, tortilla chips or baked potatoes - something like this www.bbcgoodfood.com/recipes/bean-pepper-chilli/amp

I like butterbeans - they make a good soup and you can also do a butterbean dip like hummus - I just do can of butterbeans, yoghurt and some garlic, lemon and salt but I’m sure there’s proper recipes out there. Cannellini beans also nice.

Chickpea curry ( coconut milk )

Beanburgers - I think it's a Jamie recipie I use / process butter beans chick peas onion garlic sweetcorn mint cumin together , shape into burgers fry , top with halomi

Mexican beans / ideally black or pinto beans
Fry pinion garlic and a lot of tomatoes gently till a big mush cumin , chilli , add beans . Serve with flat breads , salad , grated cheese and corriander

Chickpeas with smoked paprika onion and pepper with white fish

Lentil and feta couscous sakad

Oh also dal - we got this in the gousto box but easy enough to get the stuff and make yourself.

I’ve made dal a lot of times but always find it slightly lacking somehow, this though was one of the nicest things I’ve tasted in a long while. The aubergine bit was nice enough but you don’t need it particularly, you could leave these off if you wanted an easier option.

Thanks everyone. I feel clueless. If I wanted something cold, would you have some kind of dressing over them? They’re actually delicious I have no idea why I’ve not bothered before

We were camping last week in 30° heat snd only a cool box. I took some tins of mixed beans and added them to tins of tuna and put in a tortilla wrap for lunch. Even DH (who scoffed at my bean purchase) ate them and agreed they were good.

Another vote for roasted chickpeas.

Do you eat hummus?

Vegan meat loaf is a good one to try. I love it with ketchup.

And Dal, I eat a lot of this.

I often have chickpea salad - add tomatoes and cucumber, perhaps onion, no dressing except for olive oil.

I also love beans in a coconut milk and curry sauce. Fry some onions first, add chopped tomatoes, lots of spices and curry powder, tin of coconut milk. Couple of times of beans at the end. I make a big batch and freeze some of it - it’s lovely with rice, chapati or just on its own sometimes.
