How do I make sweet potato chips?

As in, French fry type chips.

I tried the other night but they were not as nice as the ones I bought in my last shop & I may have managed to slightly burn the outside while the chips themselves were a bit...floppy 🤷‍♀️

Idiot-proof instructions needed, please!

Give in early and buy them frozen. They are absolute pain to make.

Sweet potatoes don’t seem to crisp up quite the same as white potatoes. I toss mine in a little olive oil and paprika.

Oh, well, that's disappointing. We bought two & only used one for me and dd1.

Any suggestions for the second one? To go with chicken burgers, tonight.

Just cut it into thicker wedges and accept they won’t necessarily be crispy

If you look on the ingredients list of frozen sweet potato chips, you'll see large amounts of rice flour...
I think you have to accept that home made will be better if you go for wedges rather than chips. They'll taste good but won't be crispy.

Leave them out to dry for ages and toss in cornflour - as others have said though it's hard to get homemade ones really crispy

Sweet potatoes won’t crisp up by themselves. They need some additional starch to help the process. This video is great and has worked really well for me - super crispy. Has instructions for both baked and fried depending on your preference.

I have an air fryer. I coat them in seasoned gluten free flour (because that's all we have in the house due to some of the family being coeliac) but that's also go a high content of rice flour. I set to dehydrate for about an hour then add some oil and then air fry them.

they usually turn out pretty well. Seems to depend on the type of sweet potato too. You need the ones that are really orange when you cut them rather than a pale pink.

Sweet potatoes aren't potatoes at all.

They are a tuber from the Bindweed family.
