Salad, salad, and oh yes, salad. So blooming bored.

Sick to death of salad in all its permutations. Tonight’s was a green salad with peaches, mozzarella, pomegranate and balsamic dressing. Prawns. Potato salad, last nights was a Mexican style one based around nachos.
ive done old fashioned plated up salads. Moroccan style thingys, Asian spicy noodles ones,I am so bloody bored with them (I don’t particularly like them anyway) please send me your inspiration for something nice to eat in the heat that doesn’t involve too much green shite.

Last night I ate beyond meat burgers (GF & V), baked beans, poached egg and grated (vegan) cheese! 😁

The night before I had This Isn't sausages (GF & V) on a massive pile of fresh (the vacuum packed type) beetroot with cubes of cheese and sainsburys pickled red onions. The same sausages are nice on a massive pile of roasted broccoli and onions.

Tonight I'm having thai green veg curry. Also coming up this week; microwave jacket potatoes, and mixed bean salad with orange & soy dressing.

I had risotto yesterday, chilli nachos the day before. Lots of crusty bread and cheese and crackers and cheese - all the cheese 😆 some cold meats, olives etc, frittata/quiche. I actually don't remember the last time I had a salad

Yesterday's dinner for me was a foil parcel with salmon on a bed of asparagus spears, snow peas, baby leeks and green beans.

Then I made a mushroom cream sauce.

Tray bakes are easy and involve similar prep to salad, you just throw it in the oven for 20 mins.

Chilled courgette and coriander soup?

1 courgette per person, one veg stock cube, a bunch of corriander, veg oil and greaseproof paper.

Slice the courgettes, put in a pan with the oil and a greased proof paper 'lid', sweat the courgettes for 10 mins.

Add the corriander and other ingredients, top up with boiliing water and simmer for 10 mins, blend and then chill.

It's quite light so maybe have a sandwich with it.

I love hummus with pita and recently started making baba ghanoush.

Eggs don't take much cooking, omelets, boiled eggs, 'breakfast muffins'.

Something I discovered when I didn't have much in, lemon spaghetti (I'm assuming you can get gf)

1 lemon, some spaghetti - cook the spaghetti in water Grate the lemon zest off the lemon and then squeeze the juice out. Add a little of the cooking water to the lemon juice and zest, drain the spaghetti and toss in the lemon juice.

It would work with cold pasta as a salad ish type dish.

Stuffed courgettes.
