Recipe ideas for 13 year old to cook

DS1 (13) has really got into cooking lately. A good job as I'm suffering with my health at the minute so he's cooking for the family a lot more.
So any nice simple recipe ideas would be great. Preferably tomato and gluten free (DS2 is allergic to tomatoes and has coeliac) but if I can I tend to adapt them

So this week DS1 has made

Chicken pathia with cumin rice and naan (gluten free and he swapped the tomato paste for natural yoghurt in a small portion for his brother)

Thai basil pork with green beans and rice.

Spiced basa tacos. (He swapped out the tomato puree that went into the sauce for pureed pepper for DS2 and gluten free tortillas were used) not put a pic up for this as the only one I have has DDs face in it, and can only upload 3 photos.

And breaded chicken with roast potatoes a tomato and basil sauce and salad leaves. (Pepper and basil sauce for DS2 and gluten free breadcrumbs)

Any other ideas for family friendly, easy to cook meals? What did you eat today?

How about Thai Green curry… I find it quite easy to make and adaptable. I’ve only messed up once, I was hungry and accidentally boiled the coconut so it split.

A lot of Mexican stuff is nice and quite fun to make/eat too… corn tortilla, and I’m sure some of the flavours could be achieved without tomato’s.

I imagine Italian food would be much more tricky.

Thank you. We do love a Thai green curry. I'll pop it on the list for meals.
Mexican is a good shout, I'm sure I could adapt fajitas, tacos, enchiladas, chilli etc by using pureed red pepper instead of tomato. Might not taste entirely authentic, but at least it will mean DS2 can eat pretty much the same meal as everyone else.

You can do fish with soft cheese and wrapped in bacon or prosciutto as well.

I also like making cottage pie with pork mince for a lighter taste. I do use Worcestershire sauce in place of tomato puree for that, and I think you might be able to get GF versions of the sauce. Alternatives I've used previously have been mushroom ketchup (if you can get it, it adds a real meaty, not mushroom, flavour), or I've used a Martha Stewart recipe before for a vegan alternative to Worcestershire sauce.

I also have a family favourite recipe that I don't have a name for. I get pork tenderloin, or shoulder, cut into chunks, and fry with oil. It's seasoned with S&P, and some Italian herbs while cooking, then when almost done I squeeze a couple of limes into the pan with some butter, and serve with veg and carbs of choice. I like buttered new potatoes or sometimes noodles.

I got sucked into the first box free Gousto offer a couple of weeks ago fully expecting only to get the free one...but they were so good as an activity for the dc we ordered another. Food is nice too but the dc enjoying making them is my main motivator!

So far we've had 8 meals and ds14 and ds12 have cooked all of them, taking turns. They're ridiculously easy to follow and even ds12 who isn't a fan of cooking has managed the simpler ones 100% by himself. More difficult/involved ones for ds14.

I would highly recommend them for a 'dinner's your job' night for teens!

creamy haddock chowder with potatoes, leeks - easier than it sounds and delicious

Hunters chicken with wedges

how lovely they are such a keen cook - food looks fab!

Thanks everyone some great ideas.

I did get the free gousto Box, and ill have another free this week because of referrals, but once I have to pay I can't afford to keep it running as I'm on benefits and currently their dad isn't paying for them (I'm waiting on CMS sorting it out. They're dragging their feet over it. He hasn't paid in 2 and a half years so I had enough and took him to CMS so now he's in a strop with me)

Cottage pie is DS1s all time favourite meal so I'll definitely have to teach him how to make that. He's loved it since being a baby weaning.
