Book a few places to eat out at lunch (maybe find a place that does a really good roast dinner for the Sundays that you’re there) and dinner.
Take lots of things for your DS and/or you to do on the beach - body boards, swing ball, buckets and spades, kite, good books etc…. Consider taking wet suits so you can stay in the sea longer.
Get some nice different bits and pieces that you don’t normally have for picnics. Things like quiches, watermelon, olives, sausage rolls, strawberries, brownie bites etc… Maybe track down a local farm shop or deli.
If one of the nearby beaches has surf lessons for kids, enrol your DS for daily lessons. It will give you an hour or so where you don’t have to have half an eye on his whereabouts and you can properly engross yourself in a book or sunbathing.
Research some wet weather activities and things to do in the evenings like bowing, cinema, amusement arcades, aquarium etc…

Look at info on the location, I imagine all resorts have a website, some seaside resorts have a children’s week with free, or almost free, entertainment.
I used to do cheap day ( picnic on beach) followed by a dearer day ( local attraction, cinema)
Museums —- some are free or usually low cost.
Activity my dgc enjoyed most was sand treasure hunt, bury a couple of 50p coins and a few trinkets in the sand and your child digs to find them.
And DD on holiday with dgc last week said the cinema was the best place they went. Great a/c and almost empty.

On hols with 9yo DS right now. I recommend games to play over dinner - uno, dobble, hangman type games. We are eating out so this really works well but if you are disciplined enough would work for eating at home too. Games to play in quiet moments I. The hotel room - upwards, battleships. Specific quiet time for reading and separately quiet time for screens - split throughout the day in order to keep my sanity from the many, many questions. Each get to pick one activity per day. Take turns to pick restaurants/meals.

I would recomend a Haven or similar. Loads of activities and entertainment on your doorstep. Just check out what's included/free and what has an additional charge......
