Simple but tasty self catering holiday cooking.

I love cooking, we go on self catering holidays and I enjoy cooking abroad but try to keep it simple. One dc has additional needs and eating out is difficult!
This year I packed some roasting bags and I wish I had thought of it sooner!!! So easy to cook a chicken with no messy trays to wash. We also had pork steaks cooked with herbs, garlic, cherry tomatoes, onion and mushrooms. Just need to add rice / potatoes/ salad/ crusty bread.
What are your easy but tasty holiday meals?

Similar to you really OP. Salads and new potatoes served with cold meats or simple pork steaks or bake in bag chicken or fish. When I am at home I make my own marinades etc but on holiday I will save time and buy ready marinated meat and fish.

Also buy some ready meals (I’m on holiday after all 😀), we like the Charlie Bigham ready meals when we are holidaying in the U.K. (we haven’t been abroad since Covid).

When we went to France a lot we used to buy the BBQ packs of kebabs, sausages and marinated meat or fish from LeClerc or Carrefour and then make up salads and maybe some pasta. I always get DH to clean the BBQ afterwards though as that is a job I hate.

Coop do some lovely ready meals which we just bang in the oven and cook
Some veg, usually have lasagne or cottage pie.

Also buy fresh pasta and sauce and have with salad and garlic bread.

And have previously bought pizza bases and toppings and kids diyed their pizzaz I did have to clean up a lot after that though, not so fun!

Mostly we bbq.

The Quick Roasting Tin is a wonderful book. All recipes cooked in one tin/pot in 30 mins or under. Amazingly tasty too!

Roast chicken salad and coleslaw and baguette

I always enjoy using new take Aways as well but that depends if you're near enough one for them to deliver

I spent a lot of my youth abroad and attended too many BBQs with burnt and undercooked meat ..........put me off for life!! I avoid BBQs like the plague now.

Pizza is a family favourite, it's so easy to make the dough we always have it on holiday, and everyone gets to decide their toppings

If I'm abroad I love a trip to the local market and just buy what ever catches my eye or looks really good. Often veg based because all the veg and salad, look amazing. To be honest we don't tend to eat in a huge amount, but if I do cook then salads with a piece of fish or chicken breast with simple marinades from all the lovely herbs, lemons, garlic etc. Or fresh pasta with local prawn or crab with chilli , garlic and cherry tomatoes and fresh herbs. Or something really simple like bruschetta (tomatoes abroad are on a whole new level!)

I still yearn to recreate a ratatouille I threw together once in the south of France. I've tried hard but I think it was the quality of the veg. Simple but delicious!

I have been known to batch cook prior to going S/C in the UK, freezing and then taking some with us. Only need to use a pan or a microwave to reheat or cook the accompaniments

I often do this usually a large lasagne or spag bol for the first night. I have to be careful as we s/c in our caravan and the oven is tiny!

Cut up pepper/onion/courgette and roast in over for 20mins
add block of feta & fresh gnocchi for a further 15/20mins
mix and serve 😋

Cold cooked chicken, bag of salad, coleslaw, potato salad, bag of grated cheese and a loaf of crusty bread or wraps. Chucked on the table for everyone to help themselves
