I feel like I've forgotten how to eat healthily

I've just completely lost my mojo when it comes to eating well. I've been working really long hours, but I need to start looking after myself better. I do want to lose a few pounds but it's mostly so that I stop feeling sluggish and just a bit shit really.

I'm so bored with all my 'usuals' and I would love some ideas of healthy breakfast, lunch and dinner options from actual real people! I know I can easily look up recipes etc but I want simple, healthy options which don't have a million ingredients. Anyone help please?

I find that having no junk in the house just makes me crave it more. It doesn't take long until I'm deliverooing a box of doughnuts to myself. Plus when I'm out, I'm much more likely to binge on a cake or buy snacks because they're 'forbidden'.

Following for the tips though. I'm just coming through the other side of a major flare of an underlying health condition which has left my sluggish and pudgy and lazy. Now I have a bit more energy, I'm trying to get back into eating a bit better and not just being so exhausted that I end up ordering pizza. I'm not a great stew person but I love big hearty bowls with mixed grains (from a packet is fine), roasted veggies, protein and then some kind of sauce depending on the flavours (guacamole, hummus, sriracha etc).

one thing I find is to try and make it as easy as possible for the first week or so.

ive bought some frozen Mediterranean roast veg ( I know it’s very easy to do yourself but for the first week this makes it so easy). I throw them in a tray with a salmon piece, some halloumi or something on top and Chuck in the oven. Can also add chilli flakes. Other options are to mix with grains for a salad once cooked etc.

you can also get frozen grain mixes now too or packets. Usually once I’ve done this for a week I’m back in the groove and then move onto doing it all myself

LunaLemon BNS and red pepper curry is really simple. Soften onion, garlic and ginger in a pan with ground coriander , cumin, turmeric. Add chopped red pepper, butternut squash and chopped chilli (to taste). Add chopped tomatoes and veg stock. Transfer to oven proof dish and cook for an hour in oven.

They traybake is really simple. I send to cook the new potatoes first because it means less in and out of oven.
On ovenproof tray put cooked new potatoes, wedges of red onion and lemon wedges, season well and spay with oil.
Put in for 10 mins. Chop parsley, chives, basil and combine with juice and rind of 2 lemons, splash of oil, spoon full of honey and crushed garlic. Take tray from oven add salmon fillets, broccoli and green beans, pour over herby dressing and lightly toss so every things covered and bake for a further 15 mins.
