Remote holiday cottage - no proper cooking facilities! Tips?

So this is possibly something I should have checked sooner, but here we are!! Leave on Sunday.

So we have a toaster, kettle, microwave and fire pit. 4 nights, 2 adults 2 kids.

Will possibly venture out to a restaurant one night, but about 30 mins drive each way and we wanted to avoid driving etc hence the remoteness, but also assumed full kitchen.

It'll be an adventure I suppose, but any tips beyond beans and toast welcome! Grin

Have a look at e-books for microwave recipes, plenty of free ones on the kindle app. I was surprised at just how much a microwave can do, as I only used it for re-heating until a few years ago and we were in a similar situation.

Presumably you weren't feeding a family of 4 who've spent days walking around outdoors though?

Cooking on a fire pit can be really fun for one night, just ask them about whether they have tools for it (likely) and and wood (unlikely, usually have to bring your own).

Then you only have 2 nights (after a restaurant another night), you could do couscous and salad one night and microwave meals another?

I fed myself for 4 years and was a university athlete. We also used to make a full Christmas dinner for the flat every year!

tinned stew, tinned new potatoes (or bake regular ones in fire pit), veg of choice.

tacos or loaded nachos, with tinned chilli or a beanfeast if they still exist, tinned sweetcorn, fresh chopped peppers, avocado, lettuce, grated cheese, some jarred salsa.

barbecue on the fire pit.

microwave buttered eggs with toasted English muffins, a jarred hollandaise sauce and wilt some spinach by either nuking it or just standing it in boiling water for a few minutes.

take a metal biscuit tin with you and a baking tray small enough to fit in it. Stand it on top of the fire pit and look at recipes for “biscuit tin oven” - can do pizza, we’ve even done roast chicken that way!

vegetable kebabs on the fire pit with lumps of halloumi

small cartons of long life milk so they don’t go too cheesy.

tate and Lyle Jamaican ginger cake with instant custard - camp food of the gods!

long life pain au chocolat or croissants for breakfast - nicer than cereal with tepid milk.

Bloody hell that's a shit cottage. Can't provide the basics of a cooker.

Baked potato beans cheese. Tuna from a tin,

Cous cous with dried fruit, chickpeas or butter beans or hot dog sausages from a jar, spices (turmeric and cumin) mixed seeds.

Or a sachet of cous cous there are some lovely ones.

Apples keep out a fridge. As do potatoes and onions.

I'm going to read back other ideas now. Though scrolling back...ginger cake and custard sounds like it might make an appearance today..
