What are your favourite salad recipes that won't cost loads?

Looking for nice salad for dinner this evening, I usually do Greek salad, or chicke bacon avo salad. I'm looking for some inspiration

I make potato salad - my version just potatoes, mayo and onion, but you can tweek and add chives, peppers, anything else you think would go.

Lentils (or some grain type - from a pouch) with beetroot (buy the cooked stuff) and goats cheese. I always include a few lettuce leaves and/or rocket. With a vinaigrette although something a bit sweet can work too - I had a version in a restaurant recently where the dressing was made with raspberries. Was nice.

Roasted butternut, fresh baby spinach, walnuts and blue cheese. I usually do that one with garlic bread. Some sort of lemon/honey dressing

Coleslaw is probably the cheapest possibility around, and can be varied - so you could include baby kale or fennel or red cabbage as well as the trad white cabbage/carrot/onion/ combo. Try a mixture of yoghurt and mayonnaise to make it a bit fresher, and maybe add in some seeds or raisins.

Goes nicely with quiche or cold fish, and leftovers make a great baked potato filling.

I had green lentils, feta, beetroot, and some roasted carrots and red onion the other day. I had it with minty yoghurt dressing (literally just natural yoghurt and mint sauce).

Today I had a cheddar, salad leaves, grated carrot, beetroot, cucumber and balsamic dressing.

I get the cheapest tomatoes, own brand mozzarella and layer with spring onions and cheap black olives. Then do some sort of dressing, maybe a few dots of pesto (own brand was reasonable).

Probably not the cheapest, but lovely - peach, prosciutto and mozzarella salad with mint. You could have cheaper ham and add rocket, grapes, nuts etc.

  • Grilled/griddled courgettes, peas, feta (I use the Tesco value one), lemon juice, mint. You can add in any other green veg too - I've done it with frozen green beans and broad beans before.
  • Cous cous or pasta with roasted vegetables, garlic and basil.
  • Coronation chickpeas: chickpeas with yoghurt, garam masala/curry powder and mango chutney. Serve with green salad.
  • Roasted carrots and onions with tinned lentils/beans and hummus. Sprinkle something spicy and smoky over: smoked paprika or ras el hanout are nice.
  • Basic lettuce, cucumber and tomato salad with hummus and sun dried tomatoes - you only need a couple of tomatoes cut up small. It's nice if you add sunflower seeds or croutons for crunch.

Old school Waldorf salad is good, cubes of cheddar, apple, walnuts and celery.
