Our fixed energy comes to an end at the end of the month and I think we will go into the standard online rate as the fixed deals are incredible.
My question is, does the energy company set a new dd amount for you or do you pay different amounts each month based on what you use?. I pay monthly by dd currently and want to continue that.

They would prefer you to be (over)paying by a set monthly direct debit.

Some (maybe all but I don't know) will allow you to pay each bill in arrears by a variable direct debit of the bill amount.
Shell definitely does, as I've just switched to this - although I couldn't find the option in the app, only on the website

If your price per kwh is going to increase then they will want you to increase your direct debit amount. Nothing else really changes unless you ask to do things differently

The amount is the same every month and is supposed to be one twelfth of your annual usage.

People complain about being in credit all the time, but that's never been my experience.

We were with Avro for a few years and it was always about right and now we're with octopus, who have been slow to increase our DD in line with the new prices, so we've actually built up over £300 of debt over winter.

They have only just increased the DD but it will still take months to get back up to zero, let alone pay enough for the price rises over next winter.

With Octopus you can change the direct debit yourself so you can prevent large debit or credit balances. When I do my monthly reading I judge whether my payment needs to change and last month I increased it as my balance was getting low

You should be able to choose.
Variable DD where you give a meter reading or smart meter every month and pay what you've used.
Fixed DD (not the same as a fixed tariff) where they estimate a years usage and divide it by 12 payments.
depending on how much you can afford and how easy you will be able to pay the winter bills you should be able to decide which way you pay.
