It's my birthday and I'm trying to re-create a cookie recipe based on a delicious shop-bought packet of cookies but I'm getting my knickers in a twist over the percentages. Can anyone help? I'd like to create a small test batch starting with 100g flour. This is the list from the back of the packet:

The ingredients list is:
42% oat flour
15% coconut oil
14% coconut sugar
14% dark chocolate
10% hazelnuts
Cocoa powder - % not listed
Baking powder - % not listed
Salt - % not listed

Would be so grateful if anyone could help.

Not the point of your thread OP but if it's your birthday surely one of your loved ones should be doing the baking? Smile

Personally I'd go either for 84g of oat flour or 126g. It will make your life so much easier.

If you go for 126g then you need to multiply all the % values given by 3 to get the desired weight in grammes.

Then a pinch of salt, half a teaspoon of backing powder and say 15g of cocoa powder.

The totals make up to 95% so the 3 ingredients left must make 5%, so appropriately 1% each for ease.

If you were making 100g in total just use 1%=1g
Making 200g in total
1%=2g
Making 300g in total
1%=3g
And so on

I'd make up 200g first to see how it goes so assume your percentage signs are in grams and double all the quantities
84g oat flour
30g coconut oil etc

Agree with PPs who say work on 2 x 3 times 42 g etc for ease.

It's likely there's more cocoa powder than salt or baking powder in the recipe.

Salt will probably only be 1 or 2 g, so under a quarter of a tsp.

Baking powder, I'd say half a teaspoon of baking powder for that amount of flour.

Cocoa powder probably a heaped teaspoon or two, it doesn't need to be super accurate, you'll just end up with something that is more or less chocolatey and maybe a bit dryer or not. Maybe put in a heaped teaspoon and if it's a bit wet put a bit more in and if it's a bit dry, put a bit more melted coconut oil in.

100/42 = 2.38 so multiply the % figures by 2.38 to get the amount you need in grams if using 100g of flour
i.e. 15% coconut oil = 36g
14% coconut sugar = 33g
14% dark chocolate = 33g
10% hazelnuts = 24g
(they're all rounded up or down to the nearest gram)
I would use a pinch of salt, probably half a teaspoon of baking powder so most of your remaining 5% is cocoa powder, if you assume it 4.5% then that's 11g
