i know we should have fish more often but it's so boring!!
please give me some of recipes for a easy fish dinner for this evening!!!
Not fish and chips i'm as fat as a fool and am trying to stay away from chios

We like salmon baked in the oven with butter served with cous cous and veg. Very simple and we add sweet chilli.
Also my partner makes fish parcels- basa with Thai curry paste and dedicated coconut on top- wrapped in foil to cook

Fish pie is very easy / quick
Not a dish I would ever file under quick and easy!!

Salmon fillets, teaspoon of pesto spread over the top, grated parmesan over the top of the that, wrap in tinfoil and whack it in a hot oven. Open the foil about half way through cooking so the cheese so crispy. I think it's originally a Delia recipe but she no doubt uses a lot more detail than that!

maybe not ideal for the diet but smoked salmon pasta is easy - lots of good quality fresh tomatoes finely chopped and softened with a little onion and garlic, and a splash of white wine if you're feeling fancy. Then stir in cream cheese until it melts down and add the smoked salmon, lots of ground black pepper and some parsley to heat through.

I think it's the oily variety that should be eaten twice a week not white...?
Fish finger tacos (usually white fish, no omega 3s but very tasty), Fish Chowder (smoked mackerel, salmon, potatoes), Smoked salmon, cream cheese and rocket on bagel, Smoked salmon and scrambled eggs, tinned skinless boneless mackerel or sardines with pasta or mashed and served as an open sandwich with sriracha or chili flakes or in lettuce boats, mackerel or salmon pan friend with potatoes/rice/noodles and veg.

Kedgerees very easy to do. I buy frozen smoked haddock but you can use salmon too.

fish tacos - any fajita type pack done with white fish, lots of lime and salad.

Pesto crust salmon similar to PP's suggestion above. Mix a handful of breadcrumbs with a similar volume of pesto and some grated lemon rind, place on salmon steaks, bake as normal.

We also love those cooked salmon portions that come lightly smoked or with other flavours like sweet chilli. Flake them and put on pasta with lemon, tomatoes, spinach, broccoli. A bit of Philly, cream or creme fraiche if you have it. Expensive though now.

Fried fish fillets with peri peri spice mix and lime are good too, but quite similar to the tacos. You don't need much oil.

Cod fillets topped with red pesto
five minutes before the end of cooking a squeeze of lemon juice and then some chorizo slices or cubes. Lovely with a nice simple green salad

tuna steak grilled served cold with top quality vine tomatoes, salt, black pepper, shredded basil and balsamic vinegar and olive oil. Lovely with new potatoes or add eggs and salad for a twist on a salad niçoise

Jaimie Oliver does a lovely salmon tray bake

also salmon and cod cubed marinated overnight in Thai pasta and coconut milk. Simply put in a large wok with the marinade and add part cooked butternut squash, for ten minutes. Then add part cooked broccoli and ribbons or red pepper and chilli flakes and ginger to taste. Another ten minutes then add fresh spinach and loads of coriander. Serve with jasmine rice

We have this often. Piri piri salmon rice. Coat salmon pieces in a mixture of Nando's piri piri powder and breadcrumbs (ready made). Bake in oven for 15-20 mins. Meanwhile boil easy cook rice. Bung in frozen peas with rice for the last 5 mins of cooking. Drain rice and peas. Mix in a tbs form of oil, leftover piri piri powder and then stir in the salmon and mix. Very popular in my house. 🐟

Curried smoked haddock kedgeree is quick, easy and very tasty. Un-curried would also be good.

Kedgeree. I’ve been vegetarian for over ten years and it’s one of very few dishes where there isn’t an acceptable vegetarian alternative to me and I miss.

Poach the fish gently in water for a few minutes, remove, retain the fishy water.
Fry a finely chopped onion gently in a little oil and butter for a few minutes, add risotto rice and curry powder if using. Fry until rice begins to crackle.
Add fishy water plus a fish or chicken stock cube, bring to boil, simmer with lid on, adding more water/stock if needed.
Meanwhile remove skin and any bones from fish and flake it. When rice is cooked and virtually all the water is absorbed, stir in flaked fish, leave pan with lid on for a few minutes for fish to warm through and rest of water to be absorbed.
A garnish of chopped parsley, chives, or the green of spring onions is nice.

If simply frying, a tip from a recent Times article on chefs tips has helped me - fry the fish on the skin side until 90% done and turn it over just to kiss the other side. It's made my fish skin nice and crispy

Learning this tip helped me too, and also that the skin will release naturally when crisp and the oil comes out.. If it's sticking give it a little longer.

Otherwise kedgeree has my vote - a little smoked haddock goes a long way and super easy.

I use smoked mackerel quite often as the 5 year old loves it.
Her favourite is in a hoisin noodle salad (adaptation of recipe from Joe Wicks' family book). We also use it with new potatoes and spinach in a lemon/mustard dressing.

Salmon teriyaki with veg stir fry … my kids love it

Home made smoked mackerel pate and crusty bread and salad (just whizz up the smoked mackerel with cottage cheese, horseradish sauce, black pepper and a squeeze of lemon). it’s delectable and even better the second day after you make it

smoked haddock with a poached egg and mashed potatoes. It sounds weird but it is sooooo tasty
