Foolproof scones recipe

Haven’t made scones in years and DD wants to make some at the weekend. Obviously lots of recipes online but can’t find one with consistently good reviews. Does anyone have a reliable recipe? Thanks.

Mine's an old family recipe I can make from start to finish in 25 mins. 8oz SR flour 2oz butter 2oz sultanas 2oz sugar 1 beaten egg plus milk for if egg isn't enough liquid. 220C gas 7, 12 mins.

Makes quite an open textured scone, different to the more close texture on bought ones.

Except I use a teaspoon of Colemans mustard powder instead of cayenne.

I've always fancied trying the ones you make with just cream, lemonade and flour. They get good reviews.

Paul Hollywood's scone recipe.

I'm a good baker, but my scones weren't fabulous till I used this recipe. Absolutely gorgeous.

Some good recipes above. My top tips for making scones

  • I can rarely be bothered to sieve flour in cakes but I do for scones as makes them much lighter
  • do not over work the dough, I mean so it’s just come together. No extra kneads which it’s very easy to do
  • roll it thick, thicker than you think. This way you’ll get a nice rise and decent size scone irrespective of how wide you made them

All this, definitely! Much more important than the actual recipe.

Also, it's perfectly possible to make excellent scones with SR flour rather than plain with baking powder. Avoids that nasty taste. Some people taste it more than others (I don't notice much but found out that people I'd been making scones for are really sensitive to it)!

Also... very sharp metal cutter. You need it sharp so it doesn't compress the dough as it cuts.
