Low carb - what do you eat in an average day?

Hello!

I'm trying to cut down on refined carbs and sugar. Having potatoes, brown rice and corn cakes a few times a week (and I know salad and veg are still
carbs) and the occasional half a pizza.

I'm also avoiding high fructose fruit such as grapes, melon as well as fruit juices and trying to pack in loads of protein. But I'm looking for more ideas so I don't get bored?

I'm Currently having lots of:
Overnight oats with yoghurt
Chicken, tuna, turkey, ham etc. salads
Eggs
Chicken sausages
Lentils, chickpeas, hummus
Occasional oat crackers
Greek yoghurt, cheese
Peanut butter
Strawberries/ raspberries/ blueberries/ Pears Dash of agave syrup in coffee

Today’s menu is Greek yoghurt and cinnamon for breakfast (although I don’t normally have breakfast)

lunch will be prawns and lettuce on low carb bread.

tea is chicken curry with Slim Rice.

I can't imagine only having half avocado for lunch (I'm not a small person) although I understand they're calorific and full of fat but my brain would still feel like it's not getting enough food ! Although I've managed to cut out bread/ pasta/ those type of carbs fairly easily- my blood sugar definitely feels better for it

OP - my mum is Coeliac so I'm pretty well versed in gluten free cooking and alternatives. Will compile a list but just wanted to say that White Corn tortillas are gluten free (Old El Paso do them, make sure it's 100% white corn, not mixed with flour) - They are so delicious and great for tacos or just any time you need a convenient flat bread. More authentic thst flour ones too!
Also, the Rummo Gluten Free spaghetti is the best GF spaghetti/pasta. You cannot tell the difference at all.

Following, am about to begin low carb today . Anyone have any decent low carb recipe books they would recommend? I've got fast 800 keto book and have made the bircher - does have oats but only 1 tbsp . I do 16:8 too so hope to combine.

Yesterday I had:

Bacon and eggs with a wholemeal sandwich thin

Prawn salad with lots of iceberg (very retro lol)

Chicken casserole with a large portion of roasted crispy kale

No snacks or anything like that.

Other mornings I will have berries, Greek yoghurt and chopped nuts for breakfast, ww protein wraps with ham and salad, dinner is generally meat and veg - tonight is pork loin with mustard cream sauce and the rest of the kale.

If I do need a snack I will have a piece of cheese, apple slices dipped in Greek yoghurt or a couple of hard boiled eggs.

Nothing wrong with carbs, plenty wrong with the way we tend to consume them which leads to insulin resistance which leads to obesity, cardio vascular issues, cancers, dementia, and all the other health issues associated with obesity.

it’s why science has moved on from the calories in / calories out model and now is looking at the role that insulin plays in health disorders and obesity.

Also as a diabetic I have to be very careful about my carb intake.

I eat two meals a day, occasionally just one.

First meal is always egg based- omelette, cheesy scrambled eggs with bacon etc

second meal /only meal, good quality protein like steak, pork chops, lamb, occasionally chicken with salad or more often a cauliflower cheese mash up. I also batch make things like chilli, bolognese, beef stew, beef broth and just eat a big bowl of them for this meal…without the side carbs of course!

Low glycaemic is a lot easier to follow than low carb. Foods such as ice cream, dark chocolate, red wine, granary sourdough, are all low glycaemic.

@Worldgonecrazy nothing at all wrong with carbs. Lots wrong with consuming too many refined/ processed carbs to the extent that j was.
I'm just trying to make some changes to my diet whilst I'm not able to exercise as much as I used to.
Agree with you about GI, hence changing up the fruit I'm eating, etc.

Breakfast;
Omelette (two egg, ham and cheese)
or
100g of strawberries with 10% greek yoghurt

Lunch;
Usually chicken alfredo (no pasta obviously),
Cheese and ham

Salad
Homemade soup

Dinner;
Some form of meat (Chicken/Lamb/Beef/Pork)
Swede mash
Broccoli
Cauliflower

I'm a pretty basic eater though, I don't think things too fancy or with a ton of different flavours so it works for me but there are a ton of different low carb/keto recipes out there :)

Doodles are scribbles.

zoodles are spiralised courgette noodles (which my autocorrect has never heard of.)

when served with roast vegetables and fresh mozzarella it is very filling, and low carb.

Sorry, only just saw this. Two eggs, two heaped dessert spoons of coconut flour, 1/4 teaspoon of bicarbonate of soda. Mix well until smooth, slacken with a splodge of milk if required. The secret is to cook over a low heat. They look dry, and the edges never look cooked, but OH loves them.

Ahhh, i know zoodles. I thought doodles were some new low carb noodle replacement I hadnt heard of yet. Oh well, better stick with the zoodles.

I use them to make a creamy, lemony prawn dish but your roast veg and Mozzarella sounds good
