Help me use a huge bag of almond flour!

I need to use it up and free the cupboard space. It's an enormous bag so ideally I need recipes that use loads, that I can double / triple and either give away or store in the freezer.

Hit me with your best recipes! We aren't avoiding carbs or gluten or anything like that.

Look up recipes for Tarta de Santiago (Spanish almond cake.) Almond flour/meal/ground almonds are interchangeable, but the terms vary between UK/Aus/US recipes.

Look up Passover recipes. Lots of them use almond flour because we cant use ordinary flour.

Macarons. I’d recommend using an Italian meringue method as that’s always been much more stable and reliable than French meringue. They scale up well, freeze well and are delicious so people should accept them. I use the book Secrets of Macarons, but I imagine recipes are much of a muchness if you don’t want to buy. I’d recommend blending your icing sugar/almond blend, just make sure it’s very fine.

Cauliflower Korma. This recipe is really delicious and I’ve never bothered with the raisins because I don’t tend to keep them in. If cauliflower isn’t your thing, I’m sure it would work well with something else in its places, as it’s stirred in later anyway. Can’t imagine there would and problems scaling up or freezing, through if making the sauce to freeze I’d probably leave out the yogurt and add that in on reheating, as some people find that yogurt will split - though it’s reheated well for me.

I saw a recipe yesterday from Irini Tzortzoglou, who won Masterchef in 2019 for a light almond cake and spiked buttercream cake decorated with dried flowers which look so lovely I was tempted to give it a go until I saw that it needed 100g of almond flour. I can’t buy this in any of my local supermarkets

Be a bit careful with the recipes above; some will work far better with almond meal rather than almond flour. We use it as a normal flour substitute in a lot of things here, but you'll find recipe books out out by the manufacturers specifically for almond flour ... eg indd.adobe.com/view/41b9a615-d4c7-45d8-a530-ddebdf95e62f
