Duck roasted in a bag, how does the fat all drop out,?

Dauphinois and glazed carrots maybe

SunshineLollipopsAndRainbows · 12/04/2022 19:08

Why are you roasting it in a bag? It’s really fatty.

I’d do rice, pak Choi etc.

I'd probably do red cabbage, cauliflower, mashed potatoes and an orange sauce instead of gravy.

Proper crispy roasties would always be an option - you'd have to get the duck fat out of the bag part way through cooking, or else roast them in an alternative fat.

Asparagus, broccoli, roast potatoes, maybe peas? Depends what flavours are on the duck

Knittingchamp · 12/04/2022 19:23

not the bag

The Waitrose website has comments on the Gressingham duck in the bag, to the effect of take the bleeding duck out the bag, you want the skin to be crispy.

We did just that at Xmas, and anointed the duck skin with a sesame oil, garlic powder and honey paste and it was yum.

herecomesthsun · 12/04/2022 19:28

veg wise, we had roasties, parsnips, carrots, green beans, peas, tender stem broccoli. Asparagus would go well.

Justkeeppedaling · 12/04/2022 19:33

Take it out of the bag. And lots of green veg.

SirenSays · 12/04/2022 19:36

Cucumbers, spring onions and hoisin sauce

macaronipenguinn · 12/04/2022 19:38

Sear the skin first, then roast. Do NOT cook it in the bag.

Had duck for Christmas. Kept it very simple and did peas, roast potatoes and an orange sauce I found on the Good Food website, plus a few sprouts for me because I like them. Would probably do leeks at this time of year.

fucketyfuckwit · 12/04/2022 19:45

Scissors?

caringcarer · 12/04/2022 20:00

Roast potatoes, carrots, brocolli, peas. Orange sauce.

MrsPnut · 12/04/2022 20:02

We take the duck out of the bag and roast it on a rack over a tin. Serve with Chinese pancakes, cucumber, spring onions and hoisin sauce.

Blackberry sauce- frozen blackberries, dash of chambord, good pinch of 5 spice and stew it down, then pass through a sieve. Serve with the duck, dauphinois potatoes and green beans. Yum!

As duck is quite a fatty rich meat, I like to keep the vegetables lighter as a contrast.
I’d do a spring time mix of asparagus, broccoli florets, Romanesque cauliflower if I could find it, fresh peas, possibly the white parts of a couple of leeks, all quickly stir fried while the duck was resting before carving.
Alternatively, I’d make some creamed spinach and also stir fry some grated courgette & garlic.

Herby Greek style roast potatoes would go well with either of those vegetable option.

JustLyra · 12/04/2022 20:32

Creamed leeks, roasties and braised red cabbage

TargusEasting · 12/04/2022 20:41

What sort of bag? :

Plastic? Bought from shop. Read the instructions.

Hessian? From a poacher. Needs killing first.

Chanel? Carry it under your arm and go shopping in the King's Road.

Wallabyone · 12/04/2022 20:46

@TargusEasting 😂😂😂

MadameDragon · 12/04/2022 20:50

Potatoes, carrots, either baked apples, roasted endives or radicchio, or red cabbage.
