Can I make soup from Brussels sprout trimmings?

Currently trimming several bags of sprouts to blanch and freeze. It crossed my mind whether I could make soup from the bits of trimmings.

The lack of results for this on google suggests that I am taking frugality too far but thought I would ask on here if anyone has done it. Waste not, want not and all that.

Of course. You can make soup with anything! Just add some stock and flavour

From experience, DP would say yes. I would say definitely not. 🤮

Yes! Onions, garlic, stick the trimmings in, stock. Simmer until tender and whizz up. I like to add in blue cheese of the heat and top with crisp fried bacon pieces. Or stir in some cream at the end.

Yes you can. If it were me I'd discard the worst ones though. I wouldn't want any yellowing leaves in a soup. Also tbh cabbage soup is not my thing, though I love cabbage. But if you like the sound of it, it's definitely a safe and edible option.

I wouldn’t go so far as soup. Overboiling brassicas can make them sulphurous and bitter, as anyone who’s tried the cabbage soup diet knows. But if the trimmings are in good shape, you could try shredding them into a stir fry. If not, just put them in the compost bin for the worms.

You can make soup from anything.

Would suggest: fry an onion/garlic, add sprout tops and cook for a couple of minutes. Add nutmeg and sage, salt and pepper and cook for a further minute or two, then add veg/chicken stock and simmer for 5/10 minutes. Whiz in blender, return to pot and add some cream or full fat milk.

I would serve with crispy bacon lardons or grated cheese.

Yes,you can throw anything that is nutritious into a soup, I do this all the time. its not like eating sprouts, if you don't like sprouts. everything can be added to make things more flavoursome.

I'd not make soup with them, I'd make bubble and squeak. But if sprout soup is your thing then go for it.

If you really fancy, but I wouldn't if they've been sprayed as brassicas tend to hold on to pesticides etc.

Jack Monroe has a nice recipe for sprout scones. I often chop them and add them to stir fry. Quite like them are too.

Well I made the soup with the trimmings, onion, stock and a dollop of garlic and herb soft cheese.

It was nice, but the point about pesticides will put me off doing it again.
