Of course! If it looks ok and smells ok then it will be ok, particularly between two slices of bread, with a bit of HP sauce.

Yes, you’d know immediately if it was off, wouldn’t cross my mind not to cook it as long as it looks/smells fine

It's cured meat, so it should be fine. As long as it smells OK I'd definitely use it.

If it passes the sniff test, yes. Often give a bit to my DH first just to check there are no nasty repercussions. 😉

It's 'use-by', not 'best before' - the date is there as a warning that the meat is starting to spoil and harmful bacteria is breeding in it (you can't see or smell the bacteria). I'd find it unappetising but appreciate others are different.

Look at it this way: we are the descendants of hundreds of generations of people who got this far by sniffing their food and thinking 'yeah, it's okay'.

My genes have been quite good thus far (admittedly I might be the fuck up, but hey, what's life without a little danger?).

The difference now is that a lot of our food isn't fresh when when we buy it. If it's from a supermarket, it's been through the factory, frozen, shipped, defrosted, sat about in a shop and it doesn't get to your fridge until it's on the verge of spoiling.
