Can anyone identify what vegetable this is and know what the best way to prepare it is?

Jersulem artichoke? I think you boil and mash it but i#ve never done it. Supposed to be delicious.

Why do Jerusalem artichokes make you fart?

Jerusalem artichokes (Helianthus tuberosus) are rich in inulin, a form of starch that is not easily broken down by our bodies. Eat a lot at once and there's no beating around it – you will fart a lot. The trick is to allow your body to adapt slowly – little and often.

I think Whopping is correct. Jerusalem artichokes are smallish and individual, not a big clump like that.

Do Riverford not email you a list of contents, they do with me. I would say Jerusalem artichoke too . Definitely not celeriac as mentioned above as that is one big round thing usually!

It's def a Jerusalem artichoke. Riverford have some time suggestions on how to use them on their site, I think they're nicest in soup personally (and don't seem too farty that way Blush ) but there are lots of ways to prepare them...

I think actually it might be turmeric, there's a bit of yellow showing through. It's either that or ginger. Too knobbly for Jerusalem artichoke. Slice into it a bit and you'll find out (turmeric is very yellow and stains everything in sight including you and your clothes, so be careful)

Jerusalem artichoke, grows well in this country, in season now.

Peel, and sweat in closed pan with a small amount of celery (helps stop the wind) plus seasonings of your choice.
Great in soups.

I beg to differ on the soup being less farty. Ruined my birthday shag intentions last week after a teeny bowl of veloute as part of a tasting menu. Delicious but evil stuff.
