Toddler/family healthy freezer meals

Hi a

Due to have a baby via c-section in a few months and want to be as prepared as possible for our will be 2 year old and the two of us adults.

DP hasn't a clue in the kitchen so I want to have everything cooked/frozen so all he has to do at the time is heat it and serve.

Hit me with your best healthy, vegetable packed recipes that are freezer friendly and will last a month or two. Toddler isn't a fan of anything breadcrumbed/battered (eg. Chicken nuggets and prefers fruit and veg. He actually prefers vegetarian meals in general.)

Also any decent breakfast ideas that aren't just weetabix, shredded wheat and Cheerios?

I had looked at getting the toddler bundle delivered from MamaMade but they only deliver to mainland UK so that's out.

I used to freeze a batch of these ( searchingforspice.com/sweetcorn-fritters/ ) and microwave as needed. They would work for breakfast with a slice of toast or as a snack.

I still batch cook and freeze in portions dinners including bolognaise, curry, shepherds pie and stews. Not overly exciting but simple enough to pull out a bag from the freezer and cook up. Some people are a bit iffy about rice but I make my curry with it already mixed in and freeze like that. As long as it’s cooled and frozen quickly then heated up well it shouldn’t be a problem. Curries also do well with potato’s in them to get a bit of storage in with them.

My kids have a lot of eggy bread, pasta pesto, beans on toast with salad of cucumber/lettuce/pepper or frozen peas and sweetcorn.

I'd say don't make it hard on yourself!

Savory flapjack is easy to make and freezes well. Its filling and works well as a main component of emergency lunch or as a snack.

Overnight oats are a good breakfast in sping/summer- you can't freeze but can make a batch when you have time and they last few days.

Mini muffins are also good snacks/breakfast- fruit or savoury.

Pasta bakes with peas, spinach and chicken in a white sauce topped with cheese and frozen ready to oven bake

Slow cooker bolognaise base to turn into bolognaise/ chilli/ lasagna as needed

Vegetable soup to serve with buttered toast / roll

Quesadillas and jacket potatoes are straight forward as well as things on toast - eggs / beans etc

Cous cous with peas / sweetcorn/peppers/ cucumber/ houmous
and some halloumi is very easy too

Would just like to have a few things to hand so that when I'm too sore or knackered it's easy instead of resulting in toddler eating crap and us getting a takeaway.

Will be stocking the freezer with frozen veg anyway so can make up a few things with those.

I always have bolognese, mild veggie/chicken curry’s usually made with coconut milk in the freezer. I make roasted veg and tomato pasta sauces, DH makes cheese sauces for macaroni or we use them with broccoli for pasta & salmon bakes. Fish pie, veggie cottage pie with lentils. I often make veg/butternut/sweet potato soup and put a few portions in the freezer. DH makes lovely mash and always double makes so plenty in freezer portioned up for quick meals. Breakfast you could make some pancakes and freeze. I often bake muffins. Sweet & savoury and use for lunch boxes occasionally breakfast too. Breakfast My kids and toddler love porridge with fruit/honey on top I also sometimes make apple sauce (stewed apples & cinnamon blended) frozen and added to yoghurt or porridge. I also have the frozen fruit smoothie mixes and add to natural yoghurt with a squeeze of honey in for breakfast. Crumpets, fruit & yoghurt goes down well too.
