Healthy comforting convenience meals.

I like to think I'm a good cook. Make most things from scratch and on a Sunday I prep healthy work lunches for during the week and a good meal for Monday and Tuesday such as veggie curry or pasta dish.

However due to various stresses (no dc) I'm EXHAUSTED after work by a Thursday evening, sometimes Wednesday. So last night we ordered (nice) pizza & tonight was eggs beans and potato waffles from the freezer 🥴 And when I'm feeling shattered and emotional, I'm not craving an easy to throw together salad but I can't keep eating like this!

What's a nice middle ground ? Something ready -ish made, convenience but comforting and not total junk. Requiring no prep or cooking. Ready to serve or Chuck in the oven. Needs to be veggie. I'd love some recommendations - thanks in advance !

Thanks so much everyone! Still reading through the suggestions but have amended my online order and added some veggie shove in the oven crisp bake type things, ready made fresh pasta sauces and tortellini, and Bol pots.

Need to stop being such a martyr and thinking I should cook from scratch every eve - it's just not doable for me at the mo.

I don't have a microwave and don't really want to get one but lots of great hob and oven suggestions here!

Tesco do bags of frozen potato cubes which I like to bung in the oven in a roasting tray with some Mediterranean veg (can chop fresh or supermarkets do frozen chopped which are excellent for this and sometimes they have herbs already added too) and put some halloumi in there as well. I like a dollop of houmous on top.

If no one has suggested it the green roasting tin cook book is useful, through there are lots of tray bakes online also.

I also have an airfryer and it's really quick for veg as well as falafels and things like that.

I am also devoted to my microwave though (microwaved steamed veg! marvelous! ) - but my sister loves her rice cooker and I have a feeling you can steam veg in that.
