Anyone ever made a Japanese jiggly cheesecake? Did it work?

I really want to have a go at making one of these, as they look gorgeous, but I have form for whipped egg recipes not working for me (cake recipes with whipped fluffy eggs never seem to rise well in my oven)

Is it difficult? The recipe I found uses 13 eggs, so it's a big commitment Grin

My recipe says half flour and half cornstarch? Not much of either for the huge amount of egg! I think it's supposed to turn out like a big souffle (I've never made one of those either)

That's a lot of egg, how big is the baking tin?

That recipe is for an 8.5 inch round tin, it rises quite high though I think!

I don't know, 13 egg whites give a lot of volume for a small tin. So, good luck, take one for team!

@ChardonnaysPetDragon voila! Not sure it's meant to have the big cracks in the top, but it rose and it definitely jiggles! Can't wait to taste it (the mix was heavenly)

It does have a LOT of eggs in it! The mixture tasted a lot like a really rich custard (I had a sneaky fingerful)

Yes it’s the egginess that has put me off making these before! I like eggs but I don’t want to eat a cake with a distinctly ‘eggy’ flavour Grin

I always wanted to try one so when I saw that Yo! Sushi had them, I got one and was majorly disappointed. It just tasted like sour cream.
Hopefully a homemade one tastes amazing. 🤞

I would like to make this but haven't found a recipe that I can scale down. I like eggs so the egginess wouldn't put me off.
