Chicken soup with garlic, ginger and veg and fresh herbs
Or lentil with garlic and ginger and fresh herbs.
I think ginger garlic and fresh herbs are the ingredients that can give a boost.

Nothing is more comforting than matzoh ball soup, preferably made by someone else (relative, deli). But this is a good recipe!

My super green soup. It's fab for colds and flu type illnesses.

All you need is a load of green veg, you can literally use anything and everything, last bit of broccoli stalk, bit of spinach left in the bag that looks a bit sad, leeks, spring onions etc etc

Then add a tin of light coconut milk, veg stock, fresh ginger, garlic and chilli to taste, I do mine in a soup maker but easy enough to do in a big pan and use a stick blender when cooked.

Nice big squeeze of lime when you dish it up.

Honestly it's a really good immune system booster.

Chicken broth with just a very few vegetables & a little rice added, or Potage Bonne Femme ( Elizabeth David’s recipe ).

I read a research article once which said that chicken soup has anti-inflammatory properties, so I usually love that when ill. I dont follow a recipe, but just add in what I have. Chicken, celery, carrot, potatoes/swede or other root veg, garlic and maybe a stock cube if needed.

I also love pea and ham soup. Smoked ham hock/knuckle with skin removed. Quick soak spit peas and any root veg plus onions. I dont add salt or stock cubes because the ham has more than enough salt.

Garlic soup.
All the garlic. Cloves separated and sSkinned, cooked very slowly in butter until soft. Add a large peeled chopped potato per bulb and cook until part soft then add enough chicken /veg stock to cover(and a bit) until the potato is completely soft. Blitz so the potato is half smooth half textured, thin with a little more stock or water if required. Season to taste and serve with snipped chives. This has been known to stop colds in their tracks, relieve the most dramatic of hangovers and send vampires running for the next county, but be aware, it does not work as a vegan soup. You need the butter and to cook the garlic really really slowly.

I was craving chicken soup last week but couldn't be faffed doing the full production with a whole chicken, this was faster & delicious:

  • Onion, carrot, celery, garlic plus any other veg, chopped in a pot.
  • Chicken stock to cover by a couple of inches, add whatever herbs you have (fresh thyme, rosemary & bay are good), bring to slow boil
  • Add 1 whole uncooked chicken breast or 2 thighs (thighs are better really but I just don't like them), simmer 10 mins
  • Add uncooked long grain rice (about a half cup for this amount), simmer another 15 mins.
  • Remove and shred chicken, add back in, fresh parsley, yum. Freezes well too.

It's summer here but I love my soup.
