Do they exist? Grin

Yes, I’ve had a bit of a Google - but there’s a lot of info out there and I wondered if anyone could recommend a book/recipe/website/influencer extraordinaire for healthy lower-cal bakes and treats, please?

I love baking but I can’t keep throwing massive delicious calorific cakes and desserts at my family!

Veggie Desserts and Cake – Kate Hackworthy

A kale cake or black bean brownies might sound repulsive but, judging by the images and recipes in this cookbook, they’re a tasty treat.

Combining a love of baking with veggies, Hackworthy puts anything from sweetcorn to spinach into muffins, biscuits, tarts, pastries and even ice cream.

The veg bring moisture, natural sweetness and extra nutrients to baking so less refined sugar and fat is required, making the goodies healthy yet scrumptious. Note how colorful the creations turn out to be, even though their hue comes from all-natural sources!

Each recipe comes with a little description of any history or reasoning behind the cake as well as a baking tip. As healthy baking books go, this volume is highly approachable and only includes a short introduction before diving into the 60 original recipes.

We’re most excited about:
Butternut squash cinnamon rolls with almond glaze

Beetroot seedy squares

Carrot gingerbread

These cookies are rich and chocolatey. I use sugar free sweetener (a blend of erythritol and stevia - 0 calorie and 0 carb) in them - you can use normal sugar and increase the sugar if you want, as they're quite dark. They taste best with chocolate chunks/chips added.

In general lots of recipes with almond flour, like keto dessert recipes, are low carb and have little effect on your blood sugar so 'healthy' - but the fat from the almonds makes them not often low calorie.
Using sugar free sweetener will eliminate the calories from sugar - but some people experience bloating/digestive upset from erythritol. It's not for everyone as the desserts can have a bit of a cooling taste too.

i've been using the substitute "flax eggs" to regular eggs which is less calories and produces great results
1 TBSP of ground flax
2.5 TBSP of water
mix and let it sit for a few minutes.
