What's your favourite slow cooker meal?

I seem to be using mine less this year but I've just started a new position at work & would like to make my life a little bit easier.

If I'm in a rush I don't bother browning stuff off beforehand and it's fine. Which is most of the time!

Beef cheek stew with pickeld walnuts. Sounds crazy, but very nice. I buy beef cheeks from morrisons, larger tescos with a butcher or a local butcher shop.
This isn't the exact recipe I use. Mine has port instead of red wine. I've also added stout before and any veg I happen to have. I often add a hand full of pearl barley too.

Ham and pea soup/stew with and smoked ham hock/knuckle joint

I've made a slow cooker lasagne, but it was the same effort as an oven one, so don't bother unless you don't have an oven.

Aldi do good value meal kits for red and green curry and cheaper than blue dragon brand in tesco/aldi. I've used those in the slow cooker with chicken or beef too when I can't be bothered with all the Thai ingredients from scratch.

@Plantsandpuddlesuits: here is the link below. They also do an amazing pad thai and various Indian inspired meal kits which are all the best value I've found. Note, that like all other, similar brands, they only serve 2! I therefore use 2, or even 3 in the slow cooker, depending how many I'm serving. For DH and myself, I do 2 packs, so we have left overs for the next day. Grin

Years ago, I discovered this recipe on Mumsnet.
It is a massive favourite!

You can eat it on its own, or with a couple of (veggie) sausages/spicy bean burgers/crusty bread/
And if there is any left over the day after, it is lovely stuffed in a pitta!

It is the only thing I really do in the slow-cooker. We don't eat meat and so all the meaty recipes are no good for us.
I would love to increase my repertoire, hence looking at threads like this!

Bestest recipe ever to stir through pasta:

Chicken thighs, mushrooms, chopped tinned tomatoes, tomato puree (whole tube), generous slosh of wine, chicken stock cube, dried basil, pinch of salt, tsp of sugar, dash of worcestershire sauce, very generous sprinkle of dried chives..... 4 hours on high in slow cooker. Freeze one half and stir the other half through pasta - it is devine. It's basically like pulled chicken bolognese.

Beef or lamb stew with lots of veg, beans and dumplings cooked on top. Cook all night then more in the day. Delish.

bbq gammon I used to prep this the day before (pre boil the gammon, chop the veg and mix all the sauce ingredients together) then I could dump it in the slow cooker before i left for work. I did leave the house before 6am though!

Roast lamb, usually shoulder.

Just put in the SC, switch to high and leave all day.

The fat melts and bastes the meat.

It has been responsible for a friend buying a SC, and then her brother ate her lamb and he bought a SC.

@Scorpio85 I don’t find it too hot and my kids eat it. I use a big pack of mince so it makes quite a lot - the red jalapeños are milder than green too. If you can’t get red I use half a jar of green and add a sprinkle of sugar
