Sausage Pasta Bake recipe please

Anyone care to share their favourite sausage pasta bake recipes? I love Jamie Oliver’s with fennel but the kids don’t like it 🙄. Used to make one from here with marscapone but have lost recipe and fancy a change.

Thanks.

  • put the pasta on to boil
  • Fry the sausages, add onions, garlic, mushrooms and peppers.
  • add Passata, some mixed herbs and chicken stock and reduce.
  • a couple of minutes before finishing, add half a jar on white lasagne sauce (to make it a creamy tomato sauce)
  • pour into an oven dish, top with grated cheese and put in the oven on 180 until the cheese is bubbly xx

Forgot to say, slice the sausages.

It's by far mine and my family's favourite pasta dish. My 3 yr old told me I'm the best mummy because I make it for her 😂

I turn sausages into little meatballs - four from a regular sausage - and book them in the oven. I then make a cheese sauce, and stir in some pesto. I add the meatballs to the cooked pasta, along with some cooked broccoli, pour the cheesy-pesto sauce over the top and bake. My nephews ask for it every time they visit 😁

This BBC one is lush and my DC (one of whom is a fussy git) adore it.
I was coming on to recommend this one as well!

Chop up sausages and sauté with chopped onions, sliced peppers and green olives add a can of chopped tomatoes a can of dried pasta and a can of water, cover with foil and bake for 30 mins checking after 20 mins, give it a stir and add more water if dry. Add grated cheese and bake a further 5 mins uncovered

I used to make one pretty regularly that satisfied even my picky DD & DH.

This recipe assumes 4 people with average appetites

Campbell's condensed tomato soup
Pasta
Sausages
Chorizo or pepperoni slices
Vegetables of your choice - onions, mushrooms, peppers, aubergine, courgette - basically anything that tastes nice with tomatoey sauce.
Mixed Mediterranean style herbs
Garlic
Olive oil
Some melty cheese

Preheat oven to about 200c, or use the grill
Grill the sausages. Boil the pasta until somewhat underdone, drain.
Meanwhile chop the vegetables & chorizo/pepperoni.
Gently fry vegetables in a big oven proof saucepan, in olive oil until soft. Add chorizo if using & fry briefly until the fragrant oil comes out. Add crushed garlic. (I'm lazy & use garlic puree from a tube.)
Cut up sausages into bite sized pieces, add to pan.
Add the soup, plus a can full of water. Stir it around until the soup is mixed thoroughly.
Add the pepperoni slices if using.
Add a teaspoonful of herbs, or more if liked.
Allow to come to the boil. Add the pasta & stir in thoroughly. Taste the sauce, add salt & pepper to taste. Allow to come back to the boil, then top with grated cheese.
Place in the oven for the cheese to melt & get bubbly. By the time it has, pasta should be cooked & excess liquid absorbed.
Alternatively you can fully cook the pasta in the pan over a low heat, & just place the pan under the grill for a couple of minutes to melt the cheese instead.

We used to call this Pizza pasta bake. And YY to removing the sausage skins, they're unaccountably tough these days.

Obviously I add herbs, garlic and seasoning to taste

@BertieBotts get a jar of home pride - pasta bake game changer. Cheese optional who doesn’t eat cheese

Ilikecheeseontoast · 11/01/2022 20:42

Use matteson’s smoked sausages (yes the ones from the ‘80’s) you’ll never go back! Absolutely delicious and so quick and easy. Slice up 2 packs worth (there are 2 adults and 3 children here) and fry off with some onionsand a little garlic. Add to cooked pasta with any tomatoey sauce (I usually do passata, tinned toms, maybe some chopped peppers and seasoning. Sprinkle with some grated cheese before serving. Amazing and the kids can’t get enough of it!

I made this last night. It would be just as nice with sausages. It was a big hit here which is rare they all like the same thing.

Agadorsparticus · 11/01/2022 21:18

I add dried pasta buy make sure I have plenty of stock in with the tomatoes, the pasta absorbs all the flavours, delicious.

ScouseQueen · 11/01/2022 21:20

@MauveMavis

I do pretty much exactly the same as *@MalfunctioningRobot*.

I got the recipe years ago when I was still a student.

Might even have been from "grub on a grant".

Grub on a Grant! That's brought back some memories. What a classic.

I cook the dried pasta first, for the poster who asked about that.

Sausage pasta (with chicken stock)

Olive oil in deep frying pan.
About 1lb of good quality sausage, squeeze out of casings, make into balls.
Fry for 8/10 mins until brown and, if you like add small , diced onion (and garlic for last minute or two if you enjoy the taste)
Break broccoli into florets, by eye, use approx same amount of broccoli as sausage.

Add salt, pepper and chilli flakes if you like them

Add 900/1000ml of naiiice chicken stock and about five handfuls of your preferred pasta (we like spirali) and bring to the boil and then simmer for 10/12 mins, regularly stirring, until pasta is al dente and broccoli is cooked. Don't cover.

Add a handful or so of Parmesan cheese and stir before serving,

Cheap and cheerful, yet tasty, one pan dish.

Tidypidy · 11/01/2022 22:01

Skin sausages and fry meat until brown whilst breaking it up with a spoon. I use a big frying pan that will go in oven.

Add jar of Lidl pasta sauce.

Meanwhile cook pasta then drain and add to pan.

Sprinkle with grated cheese with optional lumps of mozzarella. Bake in oven for about 25 mins until brown and bubbling.

We call it pasta like last week- was actually like last week about 5 years ago!

Rosielil · 11/01/2022 22:10

@MalfunctioningRobot

I fry the sausages then cut them up, make a tomato sauce with tin of tomatoes, garlic, onion, chicken or veg stock. Mix them all together with the pasta and put them in a casserole dish.

Then make a white sauce (butter, flour and milk), pour the sauce over the top of the dish, bit of grated cheese on top then bake.

The white sauce on top is a game changer!

Ooooooh …… now this sounds interesting!

This one is a favourite for me and dp. Dc's hate it because of the cabbage.

CinnamonSweet73 · 12/01/2022 02:10

This, I use tenderstem or ordinary broccoli, I've never seen broccoli rabe:

Gladioli23 · 12/01/2022 05:31

I also do a chicken one which could be adapted to sausages that's similar to but a slight variation on the white sauce ones above:

Make a sauce with onion garlic tomato, peppers and courgettes as well as chicken (or sausage). Make sure it's quite thick.

Cook some pasta (rigatoni - the big fat ones, sometimes seem to be called rigati too) and then mix with a creme fraîche and grana padano mixture.

Put the tomato sauce in the bottom of the oven dish, the pasta and creme fraîche mixture on top, top with more grana padano (melts better than parmesan I find) and then grill or bake til it's a melty topping to the sauce underneath.
