Excessive amount of double cream: what to do with it?

I bought a lot of double cream for Christmas, some of it for Christmas pudding, some for other things. We ended up not eating the Christmas pudding (no one had room, I tried for 3 days! 😂). What could I do with 600ml of double cream? Goes out of date on Sunday. I think I could freeze it (?) but we’re moving house in February, so will need to defrost freezer by then. Oh and we’re doing vegetarian meals for January. Some sort of pudding? I’m not sure anyone can stomach the Christmas pudding at this point!

Double cream keeps weeks past it’s date.

Freeze it into cubes or make butter.

I’d make a big Pavlova, whisk up the cream, add any fruit you have and you have a fab pud.

Buy some ready made meringues and some soft fruit and make Eton Mess. It's usually strawberries, but any soft fruit will do.

I’d do dauphinois potatoes, a chicken pie with a cream sauce, pavolva, bread and butter pudding or simply pour in a nice coffee.

It freezes well if whipped. Only takes a short while to defrost when required.

Dauphinois potatoes. Any kind of vegetable gratin. Make seasoned / herb butter and freeze it.
Was coming on to say this. Delicious, freeze well and you will have eaten them all by February

Ice cream, I did this last night with 600ml double cream. Google Nigella's no churn ice-cream for flavour ideas.
Whisk until soft & thick, add a can of condensed milk, whisk a bit more and add your flavourings. Took half out and added coffee and Baileys, into tupperware and freeze for unto a month, other half - added a banana and some peanut butter.

Booze stops the ice-cream going too hard and it is better than any shop bought stuff.

I made two really nice pies this week using ready made puff pastry, leftover turkey, bacon, onions, little bit of sausage meat stuffing, broccoli, peas and sauce made from equal amounts of double cream and chicken stock (200ml of each). I made a veggie one for my daughter with broccoli, onions, same sauce as above but also a little bit of cheese.
