Soft diet interesting ideas

We have recently moved and struck a bond with one particular couple. She has had oral surgery in the recent (2 yrs ) past for cancer with a need for a soft diet now. We would love to invite them for dinner. I know she is sick of soup, shepherds pie etc. Any ideas for something different (sorry I have no idea if she likes spicy....actually its a big ask with such a narrow view)
Really just looking for ideas where we can all have the same food so not as to make her feel different and all be happy that we have had a satisfying meal.

Wiltshire farm foods have a range of pureed or softer meals-perhaps you could get her those, and the same recipe in a normal meal for the rest of you.

Poached fish? Soufflé? Posh mash? Serve a nice sauce? Syllabub for pud?

My dad had throat surgery for oral cancer. Last nice meal I did for him was poached salmon with dauphinois followed by sponge pudding and proper custard.

Souffle is a fabulous suggestion from pp.

I love a nice butternut squash risotto, if you cook it well it should go down okay.

I make roasted red peppers stuffed with a well-cooked minced lamb mixture (lots of caramelized onions and more aromatic than hot spices) and couscous; you make up the couscous in advance the couscous absorbs all the liquid from the peppers as it cooks. And the red peppers go beautifully soft and sweet. Looks fab in a big dish too and always popular with little kids so I know it's not a challenging meal. If you use cook-from-frozen lamb mince, this seems to go especially soft (it tends to fall apart completely if you stir it a lot while it cooks).

Or jazz up a favourite - celeriac and potato mash with some a 9 hour slow-cooker beef casserole; sweet potato mash with a lamb tangine.

Or maybe you could do skate wings (it is incredibly soft fish) with capers and white sauce, with a side of pea puree and creamy mash.

Rich buttery dal and rice? You don't need to add chillies to the tadka. Can probably get away with macaroni cheese etc., if you overcook the pasta a little.

How’s about a really luxurious fishpie. Jamie Oliver has a version with Prosecco in the sauce.

Beef stew with really soft meat and tender veg and some soft bread with proper butter?
A nice tadka dhal or Chana masala with pilau rice?
Lasagne with the pasta a little overdone?

There are different levels of soft diet. You will need know exactly what she can have.

I was going to suggest fish pie. But see someone else's has already said that. If the fish is cooked well it's nice and soft in s smooth sauce with creamy mash. My mouth is watering now!

Risotto?
Two of our favourites are tomato and mascarpone and butternut.

Fivemoreminutes1 · 11/12/2021 19:42

Moussaka or Greek lamb stew

A soft diet isn’t a single diet. Some people have very different texture requirements to others. So you would need to double check with her first

Op if you have a look on the Macmillan website or other cancer charity websites they usually have a section with menu ideas to suit the requirements of the diet.
I did this when hosting my FIL fir Xmas he had bowel cancer and was on a specific diet. The Macmillan website was a godsend. It had a menu with alternative food choices for everyone's tastes linked to a prepared shopping list for Tesco's etc. My FIL was on a low residue diet so no fibre etc. He thoroughly enjoyed sitting and munching his way through a tray of mozzarella bites!!!!

Thanks for all the wonderful suggestions! @Fallagain @Ozanj yes I’ll check the texture required thank you.
