Vegetarian Christmas 'roast' without mushrooms

I'm looking for a centre piece for our Christmas dinner but without mushrooms. Most of the ones I've looked at all contain mushrooms. Any help would be much appreciated. Thanks.

I'm still stuck on the answer to this. I did a trial run of a Jack Monroe but roast in the hope it might be the answer, but it was horrible.

We just usually have a wellington. Loads of options for filling and, unlike a lot of nut roasts, it's really nice! Sometimes it gets made well in advance and frozen. Sometimes it gets made on Xmas eve because we're catering for a party anyway and it's just one more, fairly simple, thing to make.

I have three, very adjustable vegan ideas that I've used before
One is grilled slabs of cauliflower brushed with spices and oil
The other is chestnuts fried, smashed with breadcrumbs and cranberries and pressed into a cake. Bit like a boring nut roast I suppose but cut differently!
The last one are vegetable tarts made with pastry - lots of filling options

Christmas is tricky because I normally steal from other cultures for vegetarian ideas (Indian, or tofu). It doesn't always work with the flavour spread that you get from other dishes at Christmas time.

Don’t bother with the sauce and do gravy instead. I think as one of the comments says, you need to make sure the mixture is tasty before it goes into the oven, so check the spices and seasoning at that stage.

As you say Cardigan, I have to match it with the other dishes as I have 7 vegetarians and 6 meat eater for Christmas dinner so I'm juggling a bit.

Delia's parsnip and cheese roulade looks good as well.

BBC good food have a “centrepiece” bit in their website. There was a couple of beetroot things on it I might try but haven’t yet so can’t vouch

The Delia roulade looks amazing, but I am not a massive parsnip fan. I wonder if there's anything that would substitute well, maybe butternut squash?

My SILS are veggie and they have the parsnip roulade for Christmas dinner too! That or a really elaborate and special looking rainbow pie, each layer is beautifully vibrant and it’s a gorgeous looking pie. I’ll see if I can find out what it is…

This Rose Elliott recipe is wonderful. I've made it many times. It's easy to make and tastes delicious. Not a mushroom in sight. I hate mushrooms, they make me retch.

Failing that, a good nut roast recipe, also Rose Elliott, and I add extra flavours and grated veg into the mix, serve with roast potatoes, stuffing etc.

In the Tesco Finest range there is a Sweet Potato and Red Cabbage Christmas Log and also a Stuffed half Butternut Squash which both look nice.

Thank you everybody. I've had a quick look and they all look delicious. The ones that I don't do at Christmas, I'll try at other times as I'm always looking for something special to do on family occasions. It's hard to get out of the usual routines especially if I'm doing both meat and veggie dishes. I don't have to cook for this number of people every day, but on family occasions I struggle to do both sometimes. In fact the meat eaters are also happy with veggie stuff, just not all the time.

I do a gorgeous stuffing: minced shallots, walnuts, apricots, fresh sage, toasted brown breadcrumbs with beaten egg. You could use that as the filling for a wellington, or for the duxelle and then put cheese or butternut squash in the middle
