I used to order from the Chinese takeaway just to get four or five servings of hot and sour soup - then I found this recipe and I make tons of it myself, it’s amazing: thewoksoflife.com/hot-sour-soup/

All the Chinese ingredients are easy to find and cheap in a Chinese supermarket.

Onion, garlic, ginger, carrots, squash, red pepper, red lentils, curry powder and coconut milk. Really good, filling and warming.

Butternut squash, onion, red pepper, tin of tomatoes, a couple of tins of water and veg stock (you can always add more water when you blend it) and red thai curry paste.

Ham and lentil. Ham hock or ham stock cubes, lentils, yellow split peas, carrots, onion, kale, potatoes, kale and turnip.

Lentil Soup

Ham hough
Lentils
Split peas
Carrots
Onions
Boil the Ham Hough for 2 hours and remove.
Add lentils, Carrots, Split peas and onions.
Add the shredded ham hough
Simmer for a couple of hours
Add salt, pepper.
Serve with thick-sliced plain bread.
Enjoy.

Pretty much any combo of manky veg from the bottom of the fridge makes good soup!

I always use an onion though, and either a potato or lentils to thicken it.

Experiment a bit and make a note of the combinations you like best.

Cauliflower soup , which is creamy, but without cream which I appreciate as I wouldn’t want to have to buy it in specially

This red lentil soup is deliciously spiced and so tasty. The blended lentils give the soup a lovely body, and the lentils make it more filling than a soup with just vegetables.

Jamie Oliver makes one with leftover roast dinner. Everything goes in, yorkshires, meat, veg, gravy, stuffing etc. Tastes divine 👍

Tin of chopped tomatoes, veg stock, red wine, chorizo chopped into chunks, shredded leftover roast chicken, red pepper (or peppadews), smoked paprika, garlic. Mmm.

I make a lovely super green soup in my soup maker but you can also do in a pan with stick blender.

Plenty of green veg, doesn't matter what, just whatever you have in, broccoli, spinach, kale, spring greens, Savoy cabbage. Leeks etc etc
Add 1 tin low fat coconut milk, 3 cloves garlic, teaspoon of dried chilli flakes or some fresh chilli, bunch of coriander and about an inch of grated ginger (can swap all of these for dried if needed)

Simmer for half an hour or so and blend.

It's fantastic for colds and flu and a great immune system booster as well as being flipping tasty!

Eek and veg stock!!! I forgot the veg stock!!! Enough to cover the veggies but can add more or less depending on your preference of consistency

Oooh, this is my kind of thread. I love soup. "Goodness in a bowl" according to my DD.

A few of our favourites at the moment are..

Jack Monroe's lentil spinach and lemon.

Vegan broccoli with Engivita (just garlic, broccoli, stock and Engivita. Cook and whizz.

Dh does a lovely spicy tomato and chickpea but I don't know the recipe, he got it off the Internet so may be easy to find with these words. Chunky.

Asparagus soup. Shallots, garlic, Asparagus and spinach and stock. Cook and whizz. Tips are left to cook up in oil to add after whizzing.

Spiced Butternut squash and ginger with fresh coriander. Whizzed.

You've reminded me that I used to make a lovely chunky one with onion, brocolli, cauliflower, sweetcorn and green beans then added lots of stock and cream. Lots of pepper. I don't eat fish but it would work well with fish I think.

Going to read back now for Goodness in a Bowl inspiration.

This sounds delicious. I forgot that we also do a tofu and thai veg soup with Thai spices and coconut milk. But this green one sounds so good.
