To my taste celery is horrible in chilli. Even a small amount is distinctive and wrong. Carrots (not too many) and onions are good. I barely notice the taste of celery in other recipes so theres something about the combo of celery and chilli spices that doesn't work for me.

Regardless of what you wish to call it, it works just fine.

Personally on the (fairly rare) occasions I make chilli I use a cheap beef roasting joint rather than mince. Slow cook it for about 4 hours and it will fall apart nicely and has a much more pleasing texture than mince.

The Italian soffritto not the Spanish sofrito which has tomato in

Goes off to carry on splitting hairs 😉

To my taste celery is horrible in chilli.

Or in my case

To my taste celery is horrible

But that not withstanding a veg base is fine in a chilli.

They've actually got 3 types. One with just onion, celery and carrot. One with that and added herbs, and the jarred one with tomato 🤯 Who knew. The simple one has gone up by 20p.

Goes off to get a life....
